Place arugula in a large bowl
- 7 cups trimmed arugula (about 5 oz)
- 1/4 cup thinly sliced shallots
- 2 Tbsp fresh lemon juice
- 4 tsp extra virgin olive oil
- 1 Tbsp water
- 1/4 tsp kosher salt
- 1/4 tsp ground black pepper
- 1/4 cup (1 oz)fresh shaved Parmigiano Reggiano cheese
Sauteed Chicken with Artichokes, Olives and Oregano

- 4 (4-5 oz) thin sliced chicken breast cutlets
- 1 tsp dried oregano
- 1/8 tsp salt
- 1/4 tsp pepper

- 3/4 cup reduced sodium chicken broth
- 1 (14 oz) can artichoke hearts, drained and halved
- 1/4 cup pitted kalamata olives, halved

Chicken, Mushroom and Spinach Alfredo Lasagna

The recipe for the Essence spice makes 2/3 cup however you don't use that much for the recipe
- Emeril's ESSENCE Creole Seasoning (also referred to as Bayou Blast):
- 8 tablespoons (1 stick) unsalted butter
- 1 pound button mushrooms, thinly sliced
- 1 cup finely chopped yellow onion
- 3 tablespoons minced garlic
- 1/2 cup all-purpose flour
- 7 cups milk
- 2 teaspoons kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon freshly grated nutmeg
- 1 pound spinach, stemmed, washed, blanched and roughly chopped
- 3 cups grated Parmesan
- 2 tablespoons olive oil, plus more for coating casserole dish
- 2 pounds boneless skinless chicken breast

- 1 pound oven-ready lasagna sheets

- 1/4 teaspoon crushed red pepper
- 12 ounces frozen artichoke hearts, thawed and drained

- 24 (1/2-ounce) slices baguette, toasted

- 3/4 cup whole milk ricotta cheese, divided
- 1/2 tsp salt

- 3 Tbsp pesto from a jar
- 4 whole roasted peppers from a jar
- 12 slices white bread
Biscotti

- 2 tsp anise seed, crushed
- 1 tsp finely shredded lemon peel

Chunky Tomato Cucumber Guacamole

- 2 medium cucumbers or 1 large English cucumber, peeled and coarsely chopped
- 2 Haas avocados, coarsely chopped
- 1/4 cup chopped red onion
- 1 1/2 Tbsp lime juice
- 1 tsp grated lime zest
- 1/2 tsp ground cumin
- Salt and pepper, to taste
