Mixed Berry Smoothie

Place yogurt, milk and powdered sugar in blender or food processor
- 1 cup strawberry or raspberry low fat yogurt
- 1 cup fat free skim milk
- 1 Tbsp powdered sugar
- 1 (14-16 oz) bag frozen mixed berries (strawberries, blackberries, blueberries and raspberries), slightly thawed.
Broccoli Puree Soup

Fill a large pot with enough water to come 2 inches up the sides of the pot
- 1 large russet potato, peeled and cut into 1-inch chunks
- 1 pound broccoli florets
- 1/2 cup chicken broth
- 4 ounces cream cheese
- 1/4 cup freshly grated Parmesan

Springtime Chicken Pasta

1. Heat a large pot of lightly salted water to boiling
- 1 lb cavatappi or other corkscrew shaped pasta
- 1 Tbsp olive oil
- 1 1/2 lbs boneless skinless chicken breast halves, cut into 1" pieces
- 1 yellow bell pepper, cored and diced
- 1 lb asparagus, trimmed and cut into 2" pieces
- 1 pint cherry tomatoes, halved

- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 2 cloves garlic, sliced
- 1 chipotle in adobo sauce, minced
- 1 tablespoon chili powder
- 2 teaspoons kosher salt
- 6 cups chicken broth, low-sodium canned
- 1 cup corn kernels, fresh or frozen and thawed
- 1 ripe tomato, chopped
- 1 cup shredded cooked chicken
- 1/2 cup cilantro leaves
