Black Bean Mango Salad

Wonderfully refreshing summer salad
- 1 lg. can black beans, rinsed and drained
- 1/2 red onion, diced
- 2 cobs of corn, cooked and taken of cob
- 2 mangos, diced
- 1 avocado, diced
- 3/4 cup cilantro, leaves torn
- 2 limes, juiced
- 1/4 cup olive oil
- salt and pepper, to taste
Pizza Dough (bread machine)

- 1 3/8 cups water
- 1 3/4 tsp. salt
- 4 cups bread flour or whole wheat flour
- 1 Tbsp. sugar or honey
- 2 Tbsp. dry milk
- 1 Tbsp. margarine
- 4 tsp. wheat gluten (if using whole wheat flour)
- 2 tsp. Active dry yeast (bread machine yeast)
Moist Lemon Tea Cakes Recipe

In a large bowl, cream the butter, cream cheese and sugar until light and fluffy
- GLAZE:
- 1-1/2 cups butter, softened
- 1 package (8 ounces) cream cheese, softened
- 2-1/4 cups sugar
- 6 eggs
- 3 tablespoons lemon juice
- 2 teaspoons lemon extract
- 1 teaspoon vanilla extract
- 1-1/2 teaspoons grated lemon peel
- 3 cups King Arthur Unbleached All-Purpose Flour
- 5-1/4 cups confectioners' sugar
- 1/2 cup plus 3 tablespoons 2% milk
- 3-1/2 teaspoons lemon extract
Chicken & Apple Salad with Greens Recipe

1. In a large bowl, whisk the vinaigrette ingredients until blended
- VINAIGRETTE:
- 1/4 cup balsamic vinegar
- 1/4 cup orange juice
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 tablespoons reduced-sodium soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon Dijon mustard
- 1/2 teaspoon curry powder, optional
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon ground ginger
- SALAD:
- 2 cups shredded cooked chicken
- 2 medium apples, chopped
- 1/2 cup thinly sliced red onion
- 10 cups torn mixed salad greens
- 1/2 cup chopped walnuts, toasted
- 1 . In a large bowl, whisk the vinaigrette ingredients until blended. Add chicken, apples and onion; toss to coat. Just before serving, place greens on a large serving plate; top with chicken mixture. Sprinkle with walnuts. Yield: 6 servings.
Zucchini Fries for 2

1. Cut zucchini into 3-in
- 2 small zucchini
- 1 egg white
- 1/4 cup all-purpose flour
- 3 tablespoons cornmeal
- 1/2 teaspoon each salt, garlic powder, chili powder, paprika and pepper
- Cooking spray
- Marinara or spaghetti sauce, warmed
- 1 . Cut zucchini into 3-in. x 1/2-in. x 1/2-in. pieces. In a shallow bowl, whisk egg white. In another shallow bowl, combine the flour, cornmeal and seasonings. Dip zucchini in egg white, then roll in flour mixture.
- 2 . Place zucchini on a baking sheet coated with cooking spray; spray with additional cooking spray. Bake at 425° for 18-22 minutes or until golden brown, turning once. Serve with marinara sauce. Yield: 2 servings.
Slow-Cooker Pizza-Stuffed Peppers

1 In 2-quart saucepan, cook pasta in 4 cups boiling water 3 minutes
- 1/2 cup uncooked orzo or rosamarina pasta
- 4 cups boiling water
- 6 small bell peppers (about 5 oz each)
- 1/2 package (1 1/4-lb size) lean ground turkey (about 10 oz)
- 1/2 cup diced pepperoni or cooked Italian sausage (about 2 1/2 oz)
- 1 can (15 oz) pizza sauce
- 1 1/2 cups shredded pizza cheese blend (6 oz)
- 1/2 cup water
Hearty Vegetable Soup Recipe

In a stockpot, heat oil over medium-high heat; saute carrots, onions, celery and green pepper until crisp-tender
- 1 tablespoon olive oil
- 8 medium carrots, sliced
- 2 large onions, chopped
- 4 celery ribs, chopped
- 1 large green pepper, seeded and chopped
- 1 garlic clove, minced
- 2 cups chopped cabbage
- 2 cups frozen cut green beans (about 8 ounces)
- 2 cups frozen peas (about 8 ounces)
- 1 cup frozen corn (about 5 ounces)
- 1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
- 1 bay leaf
- 2 teaspoons chicken bouillon granules
- 1-1/2 teaspoons dried parsley flakes
- 1 teaspoon salt
- 1 teaspoon dried marjoram
- 1 teaspoon dried thyme
- 1/2 teaspoon dried basil
- 1/4 teaspoon pepper
- 4 cups water
- 1 can (28 ounces) diced tomatoes, undrained

- 4 Tablespoons butter

- 1/2 - 3/4 cup toasted wheat germ
Bananas Foster Baked French Toast

1. Place butter in a microwave-safe bowl; microwave, covered, 30-45 seconds or until melted
- 1/2 cup butter, cubed
- 2/3 cup packed brown sugar
- 1/2 cup heavy whipping cream
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground allspice
- 1/4 cup chopped pecans, optional
- 3 large bananas, sliced
- 12 slices egg bread or challah (about 3/4 pound)
