Brunch Pancake Wheel

Breakfast type pancake baked in a pie plate
- 3/4 cup milk
- 1/2 cup uncooked bulgur
- 8-12 oz. little smokies, browned (or 6-8 breakfast sausages)
- 2 beaten eggs
- 1/2 cup oil
- 1 cup flour
- 2 tsp. baking powder
- 2 tsp. sugar
- dash salt
- 1/2 tsp. nutmeg
- Overnight version
- additional 1/3 cup milk
Gnocchi with White Beans Skillet

1. In a large skillet, heat oil over medium-high heat
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1 package (16 ounces) potato gnocchi
- 1 can (15 ounces) white kidney or cannellini beans, rinsed and drained
- 1 can (14-1/2 ounces) Italian diced tomatoes, undrained
- 1 package (6 ounces) fresh baby spinach
- 1/4 teaspoon pepper
- 1/2 cup shredded part-skim mozzarella cheese
- 3 tablespoons grated Parmesan cheese
Sausage Gravy

- 1 lb. Bob Evans Original Sausage Roll
- 1/4 cup all-purpose flour
- 2 cups milk
- 1 teaspoon garlic powder
- salt and black pepper to taste
- 8 prepared biscuits (2 extra for mopping up gravy)

- 1 stick of butter
- 4-6 eggs
- 1 1/4 loaves of bread
- 2 onions
- 4 stalks celery
- 1/4 cup milk
- celery seed salt & pepper to taste
Chicken with Apple-Chardonnay Gravy Recipe

1. Sprinkle chicken with salt and pepper
- 6 6 6 chicken leg quarters
- 1/2 1/2 1/2 teaspoon salt
- 1/4 1/4 1/4 teaspoon pepper
- 2 2 2 large sweet apples, peeled and cut into wedges
- 1 1 1 large sweet onion, chopped
- 2 2 2 celery ribs, chopped
- 1/2 1/2 1/2 cup chardonnay
- 1 1 1 envelope brown gravy mix
- 2 2 2 large garlic cloves, minced
- 1 1 1 teaspoon each minced fresh oregano, rosemary and thyme
- Hot mashed potatoes
- 1 1. 5-qt. Sprinkle chicken with salt and pepper. Place half of the chicken in a 5-qt. slow cooker. In a bowl, combine the apples, onion and celery; spoon half of the mixture over chicken. Repeat layers.
- 2 2. 6-8 In the same bowl, whisk wine, gravy mix, garlic and herbs until blended; pour over top. Cover and cook on low for 6-8 hours or until chicken is tender.

- 1 T. extra-virgin olive oil
- 1 lb. reduced-fat sweet or hot Italian turkey sausages
- 1 small onion, diced
- 3 garlic cloves, minced
- 1 1/2 cups chicken broth
- 1 (1 lb.) bunch kale, stemmed and roughly chopped (6-7 cups)
- 1 (15 oz.) can chickpeas, rinsed and drained
- 1/4 - 1/2 cup sun dried tomato strips (optional)
- Salt and freshly ground black pepper to taste

These Salisbury Steak Meatballs with Gravy and Mashed Potatoes are a classic and a true comfort food
- Meatballs:
- 1 1/2 lb lean ground beef
- 1/2 cup Panko breadcrumbs
- 1 egg
- 1/4 cup ketchup
- 1/4 cup coarse grain mustard
- 1 tbsp Worcestershire sauce
- 1 tsp seasoning salt
- 1/2 tsp pepper
- 1 tsp onion powder
- Gravy:
- 6 tbsp butter
- 3 cups onion, chopped
- 3 tbsp Worcestershire sauce
- 4.5 cups beef broth
- 4-6 tbsp cornstarch
- 1 1/2 tsp seasoning salt
- 3 tbsp ketchup
- parsley for garnish
- 10 large potatoes peeled and chopped into 1 inch cubes
- 8 tbsp unsalted butter, 1 stick
- 1/2 cup milk, add more if needed
- 1/2 cup light cream cheese
- salt and pepper to taste
Marinara Sauce

- 2 small onions, chopped
- 6 garlic cloves, smash & slice
- 1/4 cup olive oil
- 2 T. dried parsley
- 2 tsp. dried basil
- 1 tsp. Italian seasoning
- Salt and Pepper to taste
- 50 oz. (3# 2oz.) diced tomatoes with juice
Pork Braciola

- COMBINE:
- 1 cup fresh bread crumbs
- 1 Tbsp. minced fresh garlic
- 1/2 cup shredded Parmesan
- 1/3 cup chopped kalamata olives
- 2 scallions, chopped
- 1/4 tsp. each kosher salt and black pepper
- POUND:
- 4 boneless pork loin rib-eye chops (5 oz. each)
- 3 Tbsp. olive oil
- SAUTÉ:
- 1 cup diced onions
- 1 Tbsp. minced fresh garlic
- 1/4 cup jarred kalamata olive juice
- 1 can tomato sauce (15 oz.)
- Sliced scallions

- 4 eggs

- 3 cups confectioners' sugar
