- 2 Tablespoons real maple syrup
- 1/3 cup canned pumpkin

Hearty Black Bean Soup

Cook carrots, celery, onion, and garlic in butter until soft
- 5 med. carrots, halved and thinly sliced
- 4 celery ribs, thinly sliced
- 1 large onion, chopped
- 6 garlic cloves, minced
- 3 Tablespoons butter
- 3 (14.5 oz) cans chicken broth
- 2 (15 oz) cans crushed tomatoes
- 3 (15 oz) cans black beans, drained and rinsed
- 2 teaspoons dried basil
- 3/4 t. dried oregano
- 3/4 t. ground cumin
- 3/4 t. chili powder
- 3/4 t. hot pepper sauce
- optional: leftover cooked meat
Escarole Soup

Original recipe called "Nana's Escarole Soup" from Penzey's Thanksgiving 2013 catalog
- 1 TB. olive oil
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 4 carrots, peeled and sliced into coins
- 4 cups chicken stock
- 1/2 head escarole, washed and torn into bite sized pieces
- 2 cups dry ditalini or other small pasta
- 1/4 - 1/2 t. each salt ad pepper, to taste
- 1/4 - 1/2 cup Parmesan cheese, optional
Watermelon Salad with Mint and Lime Dressing

- 1 tablespoon vegetable oil

- 3/4 teaspoon dried thyme leaves
- 1 can (13 3/4 ounces) beef broth
- 1 can (14 1/2 ounces) stewed or diced tomatoes, undrained
- 1 medium onion, cut into 1" chunks
- 2 large unpeeled potatoes (about 1 pound), quartered and cut 1/2-inch-thick slices
