Instructions Heat the oil in a large, non-stick pan over medium heat
- 2 tablespoons olive oil
- 2-3 medium potatoes, washed but unpeeled
- 1 medium onion (yellow or white)
- 2 carrots, washed but unpeeled, optional
- 1 cup mushrooms (about half of an 8 ounce package)
- 1 red or yellow bell pepper, optional
- 1/2 teaspoon red chili flakes (more or less to taste)
- 1/2 teaspoon paprika
- 1/2 to 1 teaspoon kosher or sea salt, to taste
- 1/4 to 1/2 teaspoon ground pepper, to taste
- 1 medium apple (a tart apple works best, but any will do)
