Spinach and Jack Cheese Bread Pudding

Eat your spinach-for breakfast? THis bread pudding bakes up like a cheesy, puffy custard
- 6 large eggs
- 2 cups low-fat milk
- 1/4 t dried thyme
- 1/4 t salt
- pinch ground nutmeg
- 1 package (10 oz) frozen chopped spinach, thawed and squeezed dry
- 4 oz Monterey Jak cheese, shredded (1 cup)
- 8 Slices pirm white bread, cut into 3/4 inch pieces
Sangria Smoothie

Place spinach and liquids in blender and blend; add other ingredients and blend
- Serves 2
- 2 cups fresh spinach
- 1 cup fresh orange juice
- 1 cup water
- 1 pear
- 1 apple
- 1 cup strawberries

Recipe: No Sugar Green Tomato Relish (Can or Freeze)

Make Relish: Remove stem and core from green tomatoes and roughly chop into ½ inch or 1 inch pieces

- 1 clove garlic, minced
- 1/4 cup KRAFT CATALINA Dressing
- 2 Tbsp. hoisin sauce
- 1/4 tsp. crushed red pepper

Method: Preheat the oven to 350°F
- 1/2 bunch kale (about 4 ounces)
- 6 teaspoons extra-virgin olive oil, divided
- 1/4 medium onion, finely chopped (about 2 1/2 ounces)
- 2 carrots, finely chopped
- 2 stalks celery, finely chopped
- 2 cups low-sodium chicken or vegetable broth
- 1 cup rolled oats
- 1/4 teaspoon sea salt
- 1/8 teaspoon freshly ground black pepper
