Homemade Chicken Pot Pie

Instructions Preheat oven to 400 degrees F
- 4 tablespoons butter
- 1/2 cup diced onion
- 3 carrots, diced (about 3/4 to 1 cup)
- 3 celery ribs, diced (about 3/4 to 1 cup)
- 2 cloves garlic, minced
- 1/2 cup frozen peas (no need to defrost - I used Cascadian Farm brand)
- 3 cups shredded cooked chicken (I highly recommend using The Best Whole Chicken in the Crock Pot recipe to make your chicken!)
- 4 tablespoons whole-wheat flour
- 3 cups chicken broth
- 1 cup milk
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper, or to taste
- 1/4 cup fresh parsley leaves, chopped
- 1 cup + 2 tablespoons whole-wheat flour, plus extra for rolling out the dough
- 1/4 tsp salt
- 1/2 cup cold, unsalted butter (1 stick)
- 1/4 cup water plus ice
- 1 egg beaten with a splash of water
- Round baking dish
- Baking sheet
- Food processor
Baked Spinach with Corn

For the spinach layer Heat the butter in a pan and fry the onions for one minute
- For The Spinach Layer
- 3 cups chopped spinach (palak)
- 1/2 cup chopped tomatoes
- 1/2 cup chopped onions
- 1/2 cup boiled sweet corn kernels (makai ka dana)
- 2 green chillies, chopped
- 2 tsp oil
- Salt to taste
- For Baking
- 1 tomato, sliced
- 1 tsp fresh cream
- 3 tbsp grated processed cheese
- For the Potato Layer
- 2 cups boiled and grated potatoes
- 1/2 cup crumbled paneer (cottage cheese)
- 2 tsp lemon juice
- 1 tbsp chopped coriander (dhania)
- 1 green chilli, chopped
- Salt to taste
Black Bean, Corn, and Tomato Salad

In a large bowl, combine beans, corn, tomato, onion, scallion, cilantro, salt and pepper
- 15.5 oz can black beans, rinsed and drained
- 9 oz cooked corn, fresh or frozen (thawed if frozen)
- 1 medium tomato, chopped
- 1/3 cup red onion, chopped
- 1 scallion, chopped
- 1 1/2 – 2 limes, juice of
- 1 tbsp olive oil
- 2 tbsp fresh minced cilantro (or more to taste)
- salt and fresh pepper
- 1 medium hass avocado, diced
- 1 diced jalapeno (optional)

- 2 (10 1/2 ounce) cans chicken broth
- 2 (10 ounce) packages frozen broccoli
- 1 (10 ounce) can Rotel Tomatoes

Uses a loaf pan, but can also make free-form loaves on the baking stone/pan
- 1 1/2 Cups lukewarm water
- 1 1/2 Cups lukewarm milk
- 1 1/2 T granulated yeast
- 1 T plus 1 t salt
- 1/2 Cup Honey
- 5 T canola oil plus more for greasing pan
- 6 2/3 Cup whole wheat flour (not whole wheat pastry flour)
Caesar Pasta Mason Jar Salad

Once pasta is cooked, rinse and drain under cold water
- 1 cup penne, prepared according to package directions
- 3 tablespoons Wildtree Classic Caesar Dressing Mix, prepared according to package directions
- 1/2 cup broccoli, cooked
- 1/2 cup peas
- 1/2 cup romaine, chopped

Instructions Preheat the oven to 350 degrees F
- 2 pieces whole-wheat sandwich bread
- 8 eggs, farmers’ market or organic recommended
- 1/2 cup milk, any kind will work but we use whole milk in our house
- salt and pepper, to taste
- 4 oz grated cheese, organic sharp cheddar recommended
- 1/2 lb cooked and crumbled breakfast sausage or bacon, local or organic recommended
- Also need: Foil muffin holders for baking
