Halibut Mornay

Prepare the fish: allowing 1/2 lb
- 1/2 lb. Halibut (or other solid-type fish) per person
- Flour
- Salt & pepper
- Olive oil
- 4 T. unsalted butter
- Small yellow onion chopped
- 2 garlic cloves minced
- 2 T Flour
- 1 C. Milk
- 1 egg yolk
- 2 T Cream
Confetti Salad

Put first five ingredients in a bowl
- 2 cups red cabbage, shredded
- 19 -ounce can white (cannellini) beans, drained and rinsed
- 11 -ounce cans mandarin oranges, drained
- 1/3 cup walnuts, toasted
- 2 large scallions, sliced, with green tops
- 3 tbs. extra virgin olive oil
- 2 tbs. Balsamic vinegar
- 2 tbs. Orange juice
- Salt and pepper, to taste
Lemon Salad Dressing

Combine all ingredients and mix well
- Juice of 1 lemon
- Finely grated rind of 1 lemon
- 2/3 c. Olive oil
- 2 tsp. Sugar
- 1 1/2 tsp. Salt
- 1 tsp. Coleman’s dry mustard
- 1/4 tsp. freshly ground pepper
Salade Nicoise

Grilled tuna makes it a meal!
- 1 pkg. (7 oz) Spring mix salad greens
- 1 bunch asparagus (approx 1 lb), tough ends broken off and blanched
- 1 lb red or white baby potatoes, halved and boiled but still firm
- 1 pint grape tomatoes, halved
- 10 large basil leaves, cut in thin strips
- 1 C (Marzettis) roasted garlic Italian vinaigrette
Cobb Salad

1. Arrange salad greens down center of large deep serving platter
- 2 packages fresh market salad or chopped lettuce (Bibb)
- 1 pint grape tomatoes, halved
- 2 avocados, pitted, peeled and diced
- 4 ready to cook lemon garlic marinated chicken breast cutlets , grilled and diced (buy prepared or fix your own)
- 2 hard-cooked eggs, peeled and diced
- 6 slices bacon, cooked crisp and crumbled
- 2 tbsp. Chopped fresh chives
- 1 cup t. Marzettis blue cheese Italian vinaigrette
5 Minute Miracle Salad

Combine Mann's broccoli cole slaw, parmesan cheese, diced red pepper and tomato in a large bowl
- 1/2 cup red pepper, diced
- 1 tomato, chopped
- Dash pepper, optional
- 1 bag Mann's broccoli cole slaw
- 1/2 cup grated parmesan cheese
- 1/2 cup Garlic Expressions dressing or Italian Dressing or Oil and Vinegar w/garlic

- 1/2 c. Water
- 1/4 c. Oil (veg.)
- 1 red/green pepper cut up/onions
- 2 t. Worcestershire sauce
- 1 can tomato soup
- 1/4 c. Vinegar
- 1 t. Mustard (dry)
- 2-3 t. Brown sugar
Curried Fruit

An unusual combination for a brunch or buffet
- Melt:
- 1 can peaches
- 1 cans pears
- (Cut into chunks)
- 1 can pineapple chunks
- Apricots
- 1/4 c. Butter (margarine)
- 1/2 c. Brown sugar
- 1/2 - 1 tsp. Curry powder
Beet Salad

Slice beets into strips, mix together with other ingredients
- 1 bunch beets, peeled and cooked
- 1.4 c. Chopped walnuts
- 1 1/2 tbsp. Sherry vinegar, or 3 tbsp. Balsamic vinegar boiled down to 1 1/2 tbsp.
- 3 tbsp. Olive oil
- 1 tbsp. Fresh parsley, minced
- Salt and pepper to taste
West Coast Waldorf Salad

- 3 tbs. fresh lemon juice
- 1/4 cup extra-virgin olive oil
- Kosher salt and freshly ground pepper
- 1 Granny Smith apple, unpeeled, cored and cut into 1/16 inch slices
- 2 small heads fennel, trimmed and cut into 1/16 inch slices
- 2 stalks celery, cleaned and cut crosswise into 1/16 inch slices
- 1/4 cup finely chopped chives
- 1/3 cup shelled pistachio nuts
- 1 head butter lettuce (Bibb) cleaned and torn into large pieces
- 1/2 cup goat cheese, crumbled
