Pumpkin Bread

Mix till smooth. Spray loaf pan with Pam
- Cream:
- 1 1/3 c. sugar
- 1/3 c. shortening
- Add 2 eggs
- Add 1 c canned pumpkin
- 1/3 c. water
- Mix together:
- 1 2/3 c. flour
- 1 tsp. soda
- 1/4 tsp. baking powder
- 1/3 c. raisins
- 3/4 tsp. salt
- 1/2 T. cinnamon
- 1/4 tsp. cloves
- Optional:
- 1/3 c. nuts
Zucchini Bread

This is a family favorite served at all times of the year
- 2 c. zucchini (grated)
- 3 eggs
- 1 C. oil
- 2 C. sugar
- 3 t. vanilla
- 2 C. flour
- 1/4 t. baking powder
- 2 t. baking soda
- 3 t. cinnamon
- 1 t. salt
- 1 C. chopped nuts (optional)

- 2 cups warm water (not over 110 degrees)
- 5 1/2 - 6 cups unbleached all-purpose flour
- Corn meal
- Boiling water
Navajo Fry Bread

I first had Navajo tacos in Chinle, Arizona, when visiting Jeffrey in 1993
- 2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup powdered milk
- Warm water
- Shortening
- Powdered sugar
Basic White Sauce

In 1 qt. Glass measure place butter, flour and salt microwave at high (10) 2 minutes stirring after 1 minute
- 2 tablespoons butter
- 2 tablespoons flour
- 1/2 teaspoon salt
- 1 cup milk
- Parmesan
- Nutmeg
- Sherry
- White pepper
Cream Of Cauliflower Soup

Heat butter and cook onion and celery until soft, about 4 minutes
- 2 T butter
- 1/4 large onion sliced
- 2 minced ribs celery with leaves
- 1 1/2 C chicken broth
- 1 C mashed or riced cooked cauliflower
- 1 C light cream (Fat Free half and half)
- Season to taste
- 1 tablespoon chopped parsley
- A light grating of nutmeg
- A pinch of coriander
Onion Soup

Finely slice the onions. Melt the butter and oil in a large heavy saucepan
- 3 lb onions
- 4 T butter
- 1 t sugar
- Salt
- 3 T flour
- 2 qt beef broth / canned consomme
- 3/4 1 cup white wine
- Freshly ground pepper
- Croutons made from toasted French bread
- Grated Swiss cheese/Gruyere
- Grated Parmesan cheese

- 1 lb kale
- 1 lb potatoes
- 1 lb smoked sausage (linguica or chorizo)
- 1 cup chopped onions
- 1/2 cup chopped carrots
- 2 tsp chopped garlic
- 2 Tb olive oil
- 2 Tb butter
- 2 qt chicken broth or combination of beef and chicken
- 3 lb peeled, seeded, and chopped tomatoes
- 1 1/2 cups cooked kidney beans
- Salt and freshly ground pepper
Broccoli Potato Soup

Melt butter in a large stock pot
- 3-4 T butter
- 2 medium size onions - chopped
- 2 tbsp. Flour
- 6 medium size potatoes, diced
- 1 1/2 tsp. Salt
- 1/8 tsp. Pepper
- 2 c. chicken or vegetable broth
- 1 tbsp. Chopped parsley
- 1 pkg. frozen chopped broccoli or fresh broccoli chopped
- nutmeg
- Grated parmesan cheese
Potato-Leek Chowder

- 2 -4 large leeks, while parts only, sliced
- 1 pound potatoes, about 3 medium, peeled and diced
- 1 Tbsp. unsalted butter
- 2 cups skim milk or fat free light cream
- 2 Tbsp fresh parsley or
- 2 tsp dried parsley flakes
- 1/2 tsp nutmeg
- 1/2 cup grated cheddar cheese
- 1/2 cup chopped chives
- Salt and pepper to taste
