Sweet Potato Casserole

Boil potatoes till soft, peel, mash together
- Topping:
- 6-7 sweet potatoes
- 1 t. vanilla
- 1/2 C. gold raisins
- 1/4 t. salt
- 3/4 to 1 C. sugar
- 1/2 C. soft butter
- 2 t. baking powder
- 3 medium eggs
- 2 t. butter
- 1/4 C. brown sugar
- 2 C. crushed corn flakes
- 1/4 C. chopped pecans

- Juice of 1/2 lemon (about 1 tbsp.)
- 1 medium head cauliflower (about 1 1/2 lbs), separated into florets
- 1 tsp. plus 1 tbsp butter
- 1 small fennel bulb (about 1/2 lb), trimmed, cored, cut in 1/4 inch strips (about 2 1/2 cups)
- 2 cloves garlic, peeled, chopped
- 1 pkg. (10 oz) spinach
- 1/4 cup water
- 2 tbsp. cornstarch
- 2 cups half-and-half (fat free)
- 3 tbsp. seasoned bread crumbs
- 1/3 cup shredded gruyere cheese (about 1.5 oz)
Roasted Brussels Sprouts With Applewood Bacon

An easy and delicious way to prepare brussels sprouts! They made a delicious Thanksgiving vegetable!!
- 6 slices (Wegmans applewood) smoked uncured bacon, cut in 1-inch pieces
- 2 lbs Brussels sprouts, trimmed, quartered
- 3 tbsp. basting oil (Wegmans has basil in it)
- Salt & pepper
- 1/2 C peeled chestnuts, halved (4 oz)
Scalloped Potatoes With Sun-Dried Tomato Pesto

- 3 pounds Yukon gold potatoes
- 1 cup sun-dried tomato pesto
- Salt and freshly ground black pepper
- 2 cups (8 ounces) shredded sharp cheddar cheese
- 2 tbs. chopped fresh basil or 1 tablespoon chopped fresh marjoram
- 1 cup chicken broth or canned low-sodium broth, heated to boiling
- 2 tbs. chopped fresh parsley

- 4 green onions, sliced
- 1/2 c. Chopped celery
- 1 c. Apple juice
- 1 c. Water

- 1 10-ounce package frozen chopped spinach, thawed and squeezed thoroughly to remove liquid.
- 4 eggs or equivalent egg substitute
- 1 cup part-skim ricotta cheese
- 3/4 cup freshly grated Parmesan cheese
- 3/4 cup chopped portabello mushrooms
- 1/2 cup finely chopped scallions with some green tops (about 4 large)
- 1/4 tsp. dried Italian seasonings
