Orange And Spinach Salad

This recipe came from a Southern Cooking Cookbook Aunt Donna gave me!
- Sweet-sour dressing:
- 2 small heads bibb lettuce
- 1 lb. Spinach
- 1-2 cans mandarin oranges
- 1/2 med. Onion sliced
- 1/2 c. Chopped walnuts
- 2 tsp. Butter, melted
- 1 tsp. Paprika
- 1 tsp. Dry mustard
- 1 tsp. Grated onion
- 1 c. Vegetable oil
- 1 tsp. Celery seeds
- 1 tsp. Salt
- 1/2 c. Sugar
- 1/2 c vinegar
Tortellini Salad

- 20 oz. fresh cheese-filled tortellini
- 1/2 C. light mayonnaise (or 1/4 C. Each – light mayo and fat free sour crm)
- 1/2 C. sugar
- 2 tsp. cider vinegar
- 3 C. fresh broccoli cut into small florets (blanched)
- 1/4 C. raisins
- 1/4 C. sunflower seeds
- 3/4 C. finely chopped red onion
- 6 slices crisp, cooked bacon (turkey?), crumbled
Spinach, Beet And Walnut Salad

Preheat oven to 400 degrees
- 1 1/2 lbs.medium beets; trimmed
- 1/2 cup sherry wine vinegar
- 2 large shallots; minced
- 2 packages baby spinach
- 4 heads Belgian endive; thinly sliced: crosswise
- 1 cup walnuts; (toasted), coarsely chopped (about 4 ounces)
- 6 oz.soft fresh goat cheese; (such as Montrachet), crumbled

- 1/2 cup butter
- 1/2 cup light-brown sugar, packed
- 3/4 cup granulated sugar
- 1/2 tsp. Vanilla
- 1 egg
- 2 cups sifted flour
- Salt
- 1/4 tsp. Soda
- 7-1/4 ounce package pitted dates
- 1 cup chopped nuts
Easy Peanut Butter Cookies

- 1 (14-oz) can Eagle Brand sweetened condensed milk (not evaporated milk)
- 3/4 to 1 cup peanut butter
- 1 egg
- 1 tsp. Vanilla extract
- 2 cups biscuit baking mix

- 1package1 (12-oz) package semi-sweet chocolate chips

- 1 batch, prepared peanut butter or sugar cookie dough
- Assorted holiday cookie cutters
- 2 pkgs. (11 oz) Dove brand milk or dark chocolate "Gifts" (bag of small wrapped pieces)
- 1 1/2 feet of wax paper
- 1 pkg. (14 oz) M & M's milk chocolate candies for the holidays

A Christmas favorite that can be decorated with swirls of melted chocolate or sprinkled with powdered sugar
- 2 sticks unsalted butter (softened)
- 1 C creamy peanut butter
- 1 C light brown sugar
- 1 C sugar
- 2 eggs
- 1 tsp. vanilla
- 3 1/2 C all purpose flour (sifted)
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 pkg. (13 oz) Snickers miniatures

- 1 1/2 cups flour
- 1/2 cup unsweetened cocoa
- 1/2 tsp. baking soda
