Ground Beef Stroganoff With Pasta

Add 1 tbsp of olive oil to braising pan or large skillet on high
- 12 oz Tortiglioni pasta cooked per pkg directions
- I tbsp + 1 1/2 tsp olive oil, divided
- 1 lb ground beef /poultry
- Salt and pepper to taste
- I pkg (8 oz) diced peppers & onions
- 1 pkg (8 oz) sliced mushrooms
- 2 jars (11 oz each) Mushroom Marsala sauce
- 8 tbsp French onion dip/sour cream
Beer Can Chicken

Combine all rub ingredients in a small mixing bowl
- For rub:
- 1 whole chicken (4-5 pounds)
- 1 12 ounce can beer (room temperature)
- 2 cloves garlic, minced
- 2 sprigs fresh rosemary
- 2 teaspoons olive oil
- 1 teaspoon dried thyme
- 1/2 teaspoon red pepper flakes crushed
- Juice of 1 lemon
- 1 teaspoon paprika
- 1 teaspoon salt
- 1 teaspoon fresh rosemary, chopped
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper, ground
- 1 12 teaspoon lemon zest
Noodles Romano (Green Noodles)

Luke's FAVORITE!! I use the food processor to prepare his special dish quickly!
- 1/4 c. Soft butter
- 4 - 6 T Parsley chopped
- 1 t. Crushed basil
- 12 oz. Cream cheese, softened
- Ground pepper
- 2/3 c. + Boiling water
- 8 oz. Fettucini (spinach is best....thus the "green")
- 2 large cloves garlic, minced
- 3/4 c. Shredded or grated parmesan cheese
- Large pot of boiling salted water
- Parsley for garnish
Beef Stroganoff

Slice partially frozen meat and set aside
- 1 1/2 lbs. Lean round steak or sirloin partially frozen
- 3 t. Flour
- 1-2 t. Salt
- 1/4 t. Pepper
- 3-4 T Oil and butter
- 1 large onion quartered and sliced
- 2 minced garlic cloves
- 4 oz. Fresh mushrooms-cleaned
- 1/2 c. red wine
- 1 cup dairy sour cream (or 1/2 c. sr. crm plus cream of chicken soup)
- Minced fresh parsley for garnish

I made this for the party after our wedding in August, 1979, with our own fresh garden vegetables
- 2 large onions, sliced
- 2 garlic cloves, minced
- 1 eggplant, peeled and cut into 1/2 - 1 inch cubes
- 6 medium zucchini thickly sliced
- 2 green or red peppers seeded and cut into chunks
- 4 large tomatoes peeled and chunked
- 1 tsp. basil
- 1/2 C. minced parsley
- 4 T. olive oil

Beef, Pasta, Artichoke Toss

Broil the steak to medium rare or medium done
- For the balsamic vinaigrette:
- 1 1/2 boneless beef sirloin steak cut 1 inch thick
- 4 c uncooked tricolor rotelle (rotini)
- 1 1/4 oz. Can quartered artichoke hearts, drained
- 1/2 (or more) large red bell pepper, cut into thin strips
- 1 c. Small pitted ripe olives-sliced
- 2 tbsp. thinly sliced fresh basil
- 1/4 c. Olive oil
- 1/4 c. Balsamic vinegar
- 1 1/2 tsp. Dried basil leaves
- 3/4 tsp. Salt
- 1/4 tsp. Pepper

- 10-12 lb field pumpkin
- 5 tbsp butter
- 1/3 cup sugar
- 2 lb sugar pumpkin
- 2-3 peaches or pears
- 1 1/2 - 2 lb stew beef or venison
- 1 tbsp vegetable oil
- 1 tbsp chopped garlic
- 1 cup chopped onions
- 1 cup sliced carrots
- 1/2 cup chopped green pepper
- 4 cups beef broth
- 1/2-2 cups peeled, seeded, and chopped tomatoes

Zucchini Quiche

Grate zucchini, salt, drain, squeeze out remaining liquid in paper towels
- 2 - 3 small/medium zucchini
- 2 eggs + 1 egg yolk
- 1 t. marjoram
- salt
- fresh ground pepper
- 1 C. heavy cream
- 1/2 - 1 C. grated cheese (cheddar)
Beef And Broccoli

- 1 lb. Flank steak
- 2 large pieces of fresh broccoli
- 4 Chinese dry mushrooms
- 3 t. Soy sauce
- 1 carrot slice - sliced on diagonal
- 1 can bamboo shoots - drained
- 3 scallions - chopped
- 1 T ginger root - chopped
- 4 t. Cornstarch
- 1 t. Sherry
- Dried onion flakes
- Soy sauce to taste
Sicilian Meat Roll

Combine eggs, bread crumbs, tomato juice, parsley, oregano, salt , pepper and garlic
- 2 beaten eggs
- 3/4 C. soft bread crumbs
- 1/2 C. tomato juice
- 2 T. snipped parsley
- 1/2 t. dried oregano,crushed
- 1/4 t.salt
- 1/4 t. pepper
- 1 small clove garlic, minced
- 2 lbs. lean ground beef (venison or turkey or mixture)
- 8 thin slices boiled ham
- 6 oz. (1 1/2 C. ) shredded mozarella cheese
- 3 slices mozzarella cheese, halved diagonally
