Escarole with Beans (Greens and Beans)

Bring large pot of salted water to boil, add escarole, and blanch 1 minute
- 1 pkg (15 oz) food you feel good about fresh chopped escarole
- 1 tbsp olive oil
- I large clove garlic, peeled, minced
- 1/4 cup vegetable stock or wegmans reduced-sodium chicken broth
- I can (15 oz) Italian classics
- Cannellini beans (undrained)
Chicken & Mushrooms Dijon

In skillet, in 1 tbsp. Hot butter or margarine, cook chicken 10 minutes or until browned
- 4 skinless, boneless chicken breast halves
- 1 1/2 cups broccoli flowerets
- 1 1/2 cups sliced mushrooms
- 1 can cream of chicken & broccoli soup
- 1/4 cup milk
- 2 tbsp. Dijon-style mustard

- 4 Chicken breasts - boned
- 1 egg beaten
- 1 tbsp. Water
- 1/4 c grated parmesan cheese
- 1/2 c dry bread crumbs
- 2 diced garlic cloves
- 1 # spinach
- 1 # sliced fresh mushrooms
- 1 tbsp. Lemon juice
- 2 tbsp. Butter

- Stuffing mix
- 1 can of mushroom soup
- 1/2 can of milk
- 1/4 - 1/2 c.sour cream
Shepherd’s Pie

- 1 envelope dry onion soup mix
- 1/4 C. water
- 1/2 lb. ground beef or turkey or venison or any combination
- 1/2 C. soft bread crumbs
- 1/4 C. catsup
- 1 egg
- 3-4 C. hot mashed potatoes
- 1/2 C. shredded cheddar cheese
Grilled Chicken Breast

Marinade – mix and marinate chicken at least 1 hour
- Pepper Relish:
- 1 c. low sodium soy
- 1/4 c. Fresh chopped ginger
- 4 big cloves garlic - minced
- 2 juicy limes
- 1/4 c. Honey
- 4-6 skinless/boneless chicken breasts
- 1/2 c. Red ball pepper – diced
- 1 sm red onion chopped
- 1-2 jalapenos seeds removed and chopped
- 1 1/2 tbsp. Balsamic vinegar
- 1 1/2 tbsp. Olive oil
- Salt and fresh ground pepper
- 1 tbsp. Fresh cilantro

- 3 lbs beef short ribs or venison steaks
- 1 tbsp. cracked pepper blend
- 3/4 C red wine
- 3/4 C red wine vinegar
- 3/4 C water
- 1 medium (about 1/2 lb) onion, peeled, sliced.
- 5 T pan searing flour, divided (Wondra)
- 2 T. Olive oil
- 1 can (14 oz) reduced sodium beef broth
- 10 gingersnaps, crushed (about 1/2 cup crumbs)
- 1 pkg (12 oz) wide egg noodles, cooked (or Spaetzle)

Pound chicken breasts between wax paper or plastic wrap to flatten
- 2 Large skinless boneless chicken breast halves
- 4 T butter, divided
- 1 tablespoon extra virgin olive oil
- 1/2 cup all-purpose flour, or more as needed
- 1 to 2 eggs, beaten
- 1/4 to 1/2 cup vermouth or dry white wine
- 1/2 cup low-sodium chicken broth
- Juice from one lemon
- Chopped fresh parsley
