Creamy Chicken Salad

In a large bowl, combine chicken, pasta, grapes, oranges, celery, almonds, and onion
- 2 C. cubed, cooked chicken breast
- 1 C. cooked small ring pasta
- 1 C. halved seedless red grapes
- 1-11 oz. can mandarin oranges, drained
- 3 celery ribs, chopped
- 1/2 C. sliced almonds
- 1 T. grated onion
- 1 C. mayonnaise
- 1 C. light whipped topping
- 1/4 tsp. salt
Rhubarb Dream Bars

Crust: Mix ingredients like a crumble, then pat into 10x15” pan
- CRUST:
- 2 C. flour
- 1 C. butter
- 3/4 C. powdered sugar
- FILLING:
- 4 eggs
- 2 C. sugar
- 1/2 C. flour
- 1/2 tsp. salt
- 4 C. rhubarb, diced
Vegetarian Black Bean Burgers

1. Mash beans. Add onion, corn, salsa, garlic, cilantro, salt, & pepper
- 1 can (15 oz) black beans; drained, rinsed, & mashed
- 1/4 C. onion, finely chopped
- 1/3 C. corn
- 1/4 C. thick & chunky salsa
- 1 garlic clove, pressed
- 2 T. snipped fresh cilantro
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1/2 C. dry bread crumbs
- 2 egg whites, lightly beaten
Slow Cooker Chicken Enchilada Casserole

1. Put the chicken breasts and the enchilada sauce in your slow cooker
- 1.5 lbs. boneless skinless raw chicken breasts
- 1 28 ounce can Red Enchilada Sauce (I use El Pato Brand)
- Add these ingredients at the end
- 10 corn tortillas (I used an entire 11.7 ounce bag)
- 3 cups grated cheddar cheese (divided)
- 1 3.8 ounce can black olives (divided)
BRUSSELS SPROUTS WITH PARMESAN CREAM

1. Preheat oven to 425. 2
- 3 lb fresh Brussels sprouts
- 1 1/2 Tbsp olive oil
- 2 tsp kosher salt
- 1/2 tsp ground black pepper
- 2 Cups light cream
- 3 fresh rosemary springs
- 4 garlic cloves
- 1/4 C freshly grated parmesan cheese
Dill & Sour Cream Potato Salad

1. In large pan, cover potatoes with cold water
- 3 # small red potatoes
- 1 C. sour cream
- 2/3 C. mayonnaise
- 1 tsp. dill
- 2 tsp. chopped fresh parsley
- 1 tsp. salt
- 1/4 tsp. pepper
Sweet ‘n Chunky Chicken Salad

Mix together the yogurt, mayonnaise, sweetener, lemon pepper seasoning, and salt
- 1 C. cooked & roughly chopped chicken
- ½ C. chopped cucumber
- 1/3 C. red seedless grapes, halved
- 1/3 C. chopped apple
- ¼ C. plain fat-free yogurt
- 2 T. fat-free mayonnaise
- 1 packet Splenda
- ¼ tsp. lemon pepper seasoning
- Dash salt

- 1 # Velveeta cheese
- 1 (15oz) can Hormel chili with or without beans

In a large pot, prepare pasta very al dente, cooking for about half of the time indicated on the package
- 5 oz. (about 1 1/4 cups) uncooked elbow macaroni with at least 2g fiber per 2-oz. serving
- 10 oz. raw lean ground turkey
- 2 tbsp. ketchup
- 1/2 cup finely chopped onion (about 1/2 medium onion)
- 24 oz. (about 6 cups) frozen cauliflower and low-fat cheese sauce
- 3 wedges The Laughing Cow Light Creamy Swiss cheese
- 2 scallions, thinly sliced
- Optional: salt and black pepper
