Chicken Enchiladas

Grated Monterey Jack and cheddar cheese Mix the first seven ingredients together until well combined
- 3 C. cooked, chopped chicken
- 1 potato, peeled, shredded, and rinsed under cold water
- 3/4 C. diced onion
- 3/4 C. diced green bell pepper
- 1 C. sour cream
- 1 1/2 tsp. ground pepper
- 1 can condensed cream of chicken soup
- Salsa or enchilada sauce
Pumpkin-Cranberry Muffins

1. Preheat oven to 375 degrees
- 1 1/2 C. all-purpose flour
- 1 tsp. baking soda
- 3/4 tsp. ground ginger
- 1/2 tsp. baking powder
- 1/2 tsp. ground cinnamon
- 1/4 tsp. salt
- 1/8 tsp. ground cloves
- 1 C. granulated sugar
- 1 C. canned pumpkin
- 1/2 C. low-fat buttermilk

- 1 (11oz) can mandarin oranges

- 1 envelope liquid Butter Bud mix
- 6 boneless, skinless chicken breast halves
- 6 fat-free mozzarella cheese slices
- 10 3/4 0z. can cream of mushroom soup
- 1/4 C. water
- 6 oz. package (4 C.) stuffing mix
Molten Chocolate Tunnel Cake

1.Preheat oven to 375 degrees F
- 1 package (3.9 ounces) chocolate instant pudding and pie filling
- 1 1/4 cups milk
- 1 1/4 cups semi-sweet chocolate morsels, divided
- 1 package (18.25 ounces) devil's food cake mix
- 1/2 cup vegetable oil
- 3 eggs
- 1/2 cup water
- 1 container (8 ounces) frozen whipped topping, thawed, divided
- 1 pint fresh raspberries
- Whipped topping (optional)

- 2 1/4 C. flour
- 1 C. sugar

- 1/2 C. pecan halves, coarsely chopped

- Patties:
- 1 can (14.75oz) can salmon
- 1 egg, beaten
- 2 T. mayonnaise
- 3/4 C. soft bread crumbs
- 1 green onion, chopped
- 1 T. butter
- 4 buttermilk biscuits
- Sauce:
- 1/4 C. mayonnaise
- 1 T. snipped fresh dill weed
- 1 T. milk

- 6 boneless, skinless chicken breast halves
- 10 3/4 oz. can cream of mushroom soup
- 1 pkg. dry mushroom soup mix
- 1/4- 1/2 C. sour cream
- 4 oz. can mushrooms, drained
