- 1 14.5-ounce can diced tomatoes, undrained
- 1 tablespoon canola oil
- 1 onion, sliced
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 jalapeno pepper, seeded and sliced
- 12 flour tortillas, warmed
- Toppings of your choice (sour cream, cheddar cheese, salsa)
Classic Strawberry Shortcakes

1. Heat oven to 425°F. In large bowl, mix strawberries and 1/4 cup sugar; set aside
- 1 quart (4 cups) strawberries, sliced
- 1/4 cup sugar

- 1/2 cup milk
- 3 tablespoons sugar

- 1 medium onion

- 1-1/2 cups ranch dressing
- 1 tablespoon red wine vinegar
- milk to reach desired consistency (2-6 tablespoons)
- 1 12-ounce package pasta, cooked, drained and rinsed
- 1/2 cup shredded cheddar cheese
- 2 tomatoes, chopped
