Sesame Ginger Grilled Salmon

1. Thaw fish, if frozen. Rinse fish, pat dry with paper towels
- 4 5-ounce (fresh or frozen) skinless salmon fillets
- 1/4 cup reduced sodium soy sauce
- 2 tablespoons lime juice
- 1 tablespoon grated fresh ginger
- 1/2 teaspoon toasted sesame oil
- 2 tablespoons sesame seeds, toasted
- Lime Wedges, (optional)
Shrimp & Bok Choy Stir-Fry

1. In a small bowl, whisk the low-sodium chicken broth with the soy sauce, mirin and cornstarch slurry
- 3/4 cup chicken stock or low-sodium broth
- 2 tablesponns low-sodium soy sauce
- 1 tablespoon mirin
- 1 1/2 teaspoons cornstarch dissolved in 1 tablespoon of water
- 2 tablespoons canola oil
- 2 tablespoons finely julienned peeled fresh ginger
- 1 garlic clove, thinly sliced
- 1/2 teaspoon crushed red pepper
- 1 large onion, thinly sliced crosswise
- 1/4 pound mushrooms, sliced
- 1 small head of bok choy (about 12 ounces), thinly sliced crosswise
- 1 pound medium shrimp, shelled and deveined
- 1/4 package instant ramen noodles or fried Chinese noodles, crumbled
- Brown rice for serving
Strawberry-Lemon Mojitos

In a cocktail shaker, muddle the lemon wedges with the whole strawberries and mint leaves
- 8 lemon wedges
- 4 strawberries, plus 2 halved strawberries, for garnish
- 24 mint leaves, plus 4 mint sprigs, for garnish (optional)
- Ice cubes plus crushed ice
- 8 ounces gold or aged rum
- 3 ounces fresh lemon juice
- 2 ounces prepared sugarcane syrup or agave nectar
Spicy Hoisin-Glazed Ribs (Pork)

Prepare the ribs the night before: trim the membrane from the back of 2 racks (about 4 pounds)
- Rib Rub:
- 2 racks (about 4 pounds) Pork Ribs
- 1 cup rice vinegar
- 1/4 cup soy sauce
- 3 tablespoons chopped ginger
- 5 chopped garlic gloves
- 1 tablespoon Chinese 5-Spice Powder
- Hoisin Sauce Ingredients:
- 1/2 cup Hoisin Sauce
- 2-3 tablespoons Asian chili sauce
- 1 tablespoon water
- Garnish:
- Scallions
- Sesame Seeds
Sausage & Muhsroom Quiche

1. Preheat oven to 400 degrees
- 1 refrigerated pie crust or homemade (9 inch)
- 2 tablespoons butter
- 1/2 cup chopped onion
- 1 (8oz) pkg sliced fresh mushrooms
- 1/2 (16 oz) pkg sausage, cooked & crumbled
- 5 large eggs
- 1/3 cup heavy whipping cream
- 3/4 cup shredded cheddar cheese
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon garlic powder
Stuffed Potato Skins

1. Preheat oven to 400 degrees
- 20 small new potatoes
- 1 tablespoon EVOO
- 1 cup shredded extra sharp cheddar cheese
- 1 cup sour cream
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
- 4 slices, crumbled bacon if desired (coarsely chopped)

Cheesy Scalloped Potatoes

1. Position a rack in the top half of the oven and preheat to 375 degrees
- 2 cups milk
- 3 cloves garlic, smashed and peeled
- Salt to taste
- 3 pounds baking potatoes, peeled and sliced 1/4 inch thick
- 3 ounces Gruyere cheese, coarsely grated (about 3/4 cup)
- 1 pinch cayenne pepper
- Black Pepper to taste
- 1 cup heavy cream

- 3 Cups Flour
- 2 Teaspoons Ground Ginger
