Seafood Paella

1. Place broth, clam juice, and saffron in medium saucepan over medium-high heat
- 3 cups chicken broth
- 2 cups clam juice
- Pinch of Saffron
- 1 cup sugar snap peas, tough strings removed, cut crosswise in half
- 2 links chicken sausage, cut into 1/2 inch rounds
- 12 medium shrimp, shelled and deveined
- 12 cleaned squid (about 1 lb) cut into 1-inch rings.
- 1 medium onion, peeled and finely diced
- 2 tbsp minced garlic
- 1 red bell pepper, seeded and cut into 1-in long matchsticks
- 1 lb uncooked paella rice
- 1 lb mussels, in shell
- 1/4 tsp paprika
- 1/4 tsp freshly ground black pepper
- 6 plum tomatoes, seeded and cut into 1/4 in. dice
- 1/4 cup chopped flat-leaf parsley
Frozen Lemonade Pie

Preheat the oven to 350 degrees
- For the Crust:
- 2 cups graham cracker crumbs
- 1/4 cup sugar
- 7 tablespoons unsalted butter, melted
- For the Filling:
- 2 cups heavy cream
- 1 (14-ounce) can sweetened condensed milk, chilled
- 1 (6-ounce) can forzen lemonade concentrate (do not thaw)
- For the Toppping:
- 1 cup blueberries
- 1 cup raspberries
- 2 tablespoons sugar
- 1 tablespoon lemon juice

Spinach Salad w/ Grilled Peaches

Preheat the oven to 350 degrees
- For the Salad:
- 1/2 cup pecans
- 4 ripe peaches, pitted and quartered
- 2 tablespoons vegetable or olive oil
- 1/2 pound thick cut bacon, roughly chopped
- 8 cups baby spinach
- 1/2 small red onion, thinly sliced
- For the Dressing:
- 1/2 cup (4 ounces) crumbled Blue Cheese
- 1/4 cup buttermilk
- 1/4 cup sour cream
- 1/4 teaspoon sugar
- Salt and Pepper to taste
Stir Fried Shrimp & Scallops w/ Cashews

1. In a large skillet, or wok, heat 1 tablespoon vegetable oil over medium-high heat
- Garnish:
- 2 tablespoons vegetable oil, divided
- 1/2 lb fresh scallops
- 1/3 lb large fresh shrimp, peeled & deveined.
- 1 (12 oz) pkg fresh green beans, trimmed & sliced diagonally into 2-inch pieces.
- 1 cup chopped cashews (can substitute your favorite nut or use peanuts)
- 1 tablespoon minced garlic
- 1/2 cup chicken broth
- 3 tablespoons soy sauce
- 2 teaspoons corn starch
- 2 teaspoons sugar
- 2 teaspoons sesame oil
- Hot Cooked Brown Rice
- Cashews or nut/peanut of your choice.
