1. Place broth, clam juice, and saffron in medium saucepan over medium-high heat

  • 3 cups chicken broth
  • 2 cups clam juice
  • Pinch of Saffron
  • 1 cup sugar snap peas, tough strings removed, cut crosswise in half
  • 2 links chicken sausage, cut into 1/2 inch rounds
  • 12 medium shrimp, shelled and deveined
  • 12 cleaned squid (about 1 lb) cut into 1-inch rings.
  • 1 medium onion, peeled and finely diced
  • 2 tbsp minced garlic
  • 1 red bell pepper, seeded and cut into 1-in long matchsticks
  • 1 lb uncooked paella rice
  • 1 lb mussels, in shell
  • 1/4 tsp paprika
  • 1/4 tsp freshly ground black pepper
  • 6 plum tomatoes, seeded and cut into 1/4 in. dice
  • 1/4 cup chopped flat-leaf parsley
