Coconut Cake

Have all ingredients at room temperature
- 3 1/2 cups cake flour, sifted twice
- 4 tsp. baking powder
- 1/2 tsp. salt
- 16 Tbs. (2 sticks) unsalted butter
- 3 1/2 cups sugar
- 1 cup milk
- 2 tsp. vanilla extract
- 1/2 tsp. coconut extract
- 10 egg whites
- 5 Tbs. cold water
- 1/2 tsp. cream of tartar
- 1 to 1/2 tsp. light corn syrup
- 2 cups flaked coconut, fresh or dried

- 2-1/4 cups graham cracker crumbs (about 36 squares)
- 1/3 cup sugar
- 1/2 cup butter, melted
- FILLING:•2 packages (8 ounces each) cream cheese, softened
- 1 can (14 ounces) sweetened condensed milk
- 2 teaspoons vanilla extract
- 3 eggs, lightly beaten
- 1 cup (6 ounces) miniature semisweet chocolate chips
- 1 cup miniature marshmallows
- TOPPING:•1 cup miniature marshmallows
- 1/2 cup semisweet chocolate chips
- 1 tablespoon shortening

Place cool water in bowl, add 1/4 teaspoon season−all and dissolve bouillon cubes in mixture
- 2 Cups Chicken Breast (Boneless, Skinless, Cubed)
- 1 Cup Flour
- 1 −1/2 Cups Cracker Meal
- 1/4 teaspoon Paprika
- 2 Cups Water
- 2 Chicken Bouillon Cubes
- 2 −1/4 teaspoons McCormick Season−all
Starbucks Vanilla Almond Biscotti

Preheat oven to 350 degrees
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1 cup chopped or slivered almonds, toasted in a 350 degree oven for 7-10
- minutes, until fragrant, and cooled
- 3 large eggs, room temperature
- 1 teaspoon each: vanilla and almond extract
- Pinch of salt
Ham 'n' Swiss Rolls

Separate crescent rolls into eight triangles
- 1 tube (8 ounces) refrigerated crescent rolls
- 1 cup diced fully cooked ham
- 3/4 cup finely shredded Swiss cheese
- 1-1/2 teaspoons prepared mustard
- 1 teaspoon finely chopped onion
Black Eyed Pea's Cornbread

- 1 lb. ground beef
- 1 cup canned black−eyed peas, drained
- 1 cup onion, chopped
- 3/4 cup cream−style corn
- 1 cup cornmeal
- 1/2 cup flour
- 1 cup buttermilk
- 1/4 cup cooking oil
- 2 eggs, slightly beaten
- 1 tsp. Salt
- 1/2 tsp. Baking soda
- 2 jalapeno peppers, chopped
- 1 cup Cheddar cheese, grated

Southwest Egg Rolls & Cool Avocado Dip

In a large bowl, combine the first 10 ingredients
- DIP:
- 2-1/2 cups shredded cooked chicken
- 1-1/2 cups (6 ounces) shredded Mexican cheese blend
- 2/3 cup frozen corn, thawed
- 2/3 cup canned black beans, rinsed and drained
- 5 green onions, chopped
- 1/4 cup minced fresh cilantro
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 1 teaspoon grated lime peel
- 1/4 teaspoon cayenne pepper
- 20 egg roll wrappers
- Oil for deep-fat frying
- 1 cup ranch salad dressing
- 1 medium ripe avocado, peeled and mashed
- 1 tablespoon minced fresh cilantro
- 1 teaspoon grated lime peel
Starbucks Spiced Holiday Coffee

- 2/3 cup ground Starbucks Christmas Blend or other dark roast coffee
- 4 cinnamon sticks, crushed or broken into small pieces
- 6 cups water
- 1/2 teaspoon ground cardamom
- 2/3 cup honey
- Half-and-half or milk

- Glaze (recipe follows)
- 3 pounds chicken wings
- 1 pound flour
- 1 tablespoon salt
- 1 tablespoon paprika
- 1 teaspoon black pepper
- 1 teaspoon cayenne pepper
