Short-cut ravioli using wonton wrappers!
- One 16-ounce bag spinach
- 5 tablespoons extra-virgin olive oil
- 1 onion, finely chopped
- 4 ounces cream cheese, softened
- 1/2 cup finely grated parmesan cheese, plus more for serving
- Salt and pepper
- 48 wonton wrappers (from a 12-ounce package)
- 1 1/2 cups store-bought tomato sauce, warmed, for serving
- Chopped parsley, for sprinkling

Easy and colorful side dish
- 2 medium zucchini, quartered and cut into large pieces
- 4 medium potatoes, peeled and cut into large chunks
- 1 medium red bell pepper, seeded and chopped
- 1 clove garlic, sliced
- 1/2 cup dry bread crumbs
- 1/4 cup olive oil
- paprika to taste
- salt to taste ground
- black pepper to taste
- OPTIONAL: Can add a 1/2 c. grated parmesan to the breadcrumbs if you want.

- 4 T. vinegar

- 1/2 cup sliced almonds
- 3 T. brown sugar
