Pumpkin Cheesecake

Preheat oven to 350 degrees F
- Crust:
- 1 pkg Graham Crackers
- 3 tbs packed brown sugar
- 1/2 tsp ground cinnamon
- 1 stick melted butter
- Filling:
- 3 8oz pkgs cream cheese (softened)
- 15 oz pumpkin puree
- 3 eggs
- 1 egg yolk
- 1/4 cup sour cream
- 1 1/2 cups sugar
- 1/2 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 1/8 tsp ground cloves
- 2 tbs all purpose flour
- 1 tps vanilla extract
French Onion Soup (Condensed)

- 1 small onion (diced)
- 1 TBS olive oil
- 1 TBS molasses
- 1 cup water
- 1 pkg Goya beef bouillon
- 2 TBS corn starch
English Pea Salad

*Thaw peas in a colander, so they do not retain too much liquid
- 12-16 oz bag frozen sweet peas/petite peas (thawed)
- 1/2 cup mayonnaise (more or less to preference)
- 1/2 tsp sugar
- 1/4 tsp salt
- 1/8 tsp white pepper (or black pepper)
- 1/4 cup chopped green onion (or 1 scallion, minced)
Cajun Chicken Pasta (Chili's)

Prepare pasta as directed to al dente
- Topping (optional):
- 2 chicken breasts
- 4 tsp Cajun seasoning
- 2 TBS olive oil
- 2 TBS unsalted butter
- 3 garlic cloves (minced)
- 1-2 cups heavy cream
- 1/2 tsp lemon pepper seasoning
- 1/2 cup shredded Parmesan (fresh)
- 1/2 tsp salt
- 16 oz penne pasta
- 2 roma tomatoes (seeded & diced)
- 2 TBS fresh chopped green onions (tops only) (optional)
- 1/4 cup fresh grated Parmesan or Asiago cheese (optional)
Spinach Dip

Thaw spinach and squeeze dry
- 1 10oz pkg frozen spinach
- 1 16oz pkg sour cream
- 1 cup Hellman's mayonnaise
- 1 pkg Knorr vegetable dip mix
- 3 green onions (chopped)
Lasagna

Preheat oven to 350 degrees
- 12 uncooked lasagna noodles (not oven-ready)
- Sauce:
- 1 lb ground Italian sausage (or beef or turkey)
- 1 medium onion (diced)
- 2 garlic cloves (chopped)
- 28oz can crushed tomatoes
- 1/4 cup red wine
- 2 tsp basil
- 1 tsp oregano
- 1 tsp salt
- 1/2 tsp rosemary
- Filling:
- 30-32 oz ricotta cheese
- 1 egg
- 2 cups shredded Italian blend cheese (reserve 1/4 cup for topping)
- 1 TBS dried parsley
- 1 tsp dried oregano
- 1/4 tsp garlic salt
- 1/4 cup shredded Parmesan cheese
Spaghetti Sauce

Cook ground meat, onion, celery, and garlic in large deep skillet until no longer pink; drain
- 1-2 lb ground beef (or turkey)
- 1/2 onion (diced)
- 2 ribs celery (diced)
- 1 tsp minced garlic
- 29 oz can tomato puree
- 1/4 cup red wine (or water)
- 1 green bell pepper (diced)
- 1 yellow bell pepper (diced)
- 1 red bell pepper (diced)
- 2 carrots (peeled and chopped)
- 2 zucchini (chopped)
- 8 oz mushrooms (diced)
- 1 tsp garlic powder
- 2 tsp basil
- 1 tsp oregano
- 1 tsp salt
- 1/2 tsp rosemary
Hamburger Upside-Down Casserole

Preheat oven to 350 degrees
- 2 1/2 cups elbow macaroni
- 3 tbs butter
- 1/2 cup diced onion
- 2 tsp minced garlic
- 1 lb ground beef
- 1 8oz tomato sauce
- 1 tsp salt
- 1/4 tsp pepper
- 1/4 tsp oregano
- 8 oz shredded cheddar cheese
- 3 eggs (beaten)
- 3/4 cup milk
Arroz Amarillo (Yellow Rice)

Heat oil in medium saucepan
- 3 TBS extra-virgin olive oil
- 1/2 yellow onion (diced)
- 1/4 green bell pepper (diced)
- 1 Roma tomato (diced)
- 1 1/2 tsp chicken base (bouillon)
- 1 1/2 tsp sazon seasoning
- 1 1/2 cup extra long grain rice
- 3 cups chicken broth (or stock)
Pork Rub

- 1 tsp black pepper
- 1 tsp kosher salt
- 1 tsp ground cumin
- 1 tsp thyme
- 1 tsp rubbed sage
- 1 tsp chili powder
- 1 tsp paprika
- 1 tsp ground mustard
- 1 tsp garlic powder
