Beef Cabbage Stew

Ingredients
- 2 TBS olive oil
- 1 onion (diced)
- 1 lb ribeye (cut into one inch pieces)
- 1 stalk celery (diced)
- 2 carrots (peeled and diced)
- 1 head cabbage (chopped)
- 4 cloves garlic (2 tsp) (minced)
- 1/4 cup all purpose flour
- 6 cups beef stock/broth
- 3 tsp dried parsley
- 2 tsp thyme leaves
- 1 tsp basil
- 1 tsp oregano
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 TBS salt (more to taste)
- black pepper to taste

Preparation
Step 1
Heat oil in stock pot over medium heat. Add beef. Sear until browned. Add onions. Cook until transparent (3-4 minutes). Add celery and carrots. Cook 3-4 minutes. Add cabbage. Cook another 5 minutes (until softened). Add garlic. Cook one minute more. Sprinkle with flour. Stir well to coat.
Add beef stock/broth, parsley, thyme, basil, oregano, onion & garlic powder, and salt and pepper. Cover. Simmer 20-30 minutes (or until cabbage and carrots are soft and stew is thickened.
