Mexican Hot Sauce

Put all ingredients in blender or food processor
- 8 tomatoes
- 2 medium onion
- 5 jalapeno
- 1 teaspoon black pepper
- 1 teaspoon red pepper
- 1 teaspoon garlic powder
- 1 teaspoon celery salt
- 1/2 teaspoon worcestershire sauce
- 1/4 teaspoon oregano
- 1 tablespoon salt
- 1/2 cup cider vinegar
Smothered Steak

Caramelize sliced onion in butter and oil
- 1 pound cube steaks
- 2 tablespoons oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon flour
- 1 teaspoon paprika (optional)
- 2 large onions, thinly sliced
- 1 tablespoon tomato paste or 1 chopped fresh tomato
- 1 cup dry wine (substitute water)
- 1 tablespoon chopped fresh herb (oregano, savory, thyme, etc ) or 1 teaspoon dried
Mexican Skillet Bread

- 1 onion -- chopped
- 1 clove garlic -- minced
- 1 tablespoon oil
- 1/2 cup kidney beans -- cooked
- 3/4 cup bean liquid -- reserved
- 1 egg -- beaten
- 1 cup cornmeal
- 1 tablespoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/3 cup cheese -- grated
Beef Pie with Artichokes and Mushrooms

Melt 2 tablespoon butter in Dutch oven, medium heat
- 1 pound chuck roast or sirloin -- cubed
- 1/4 cup olive oil
- 1 1/2 cups onion -- chopped
- 2 tablespoons flour
- 1 cup roma tomato -- diced
- 3 tablespoons tomato paste
- 1 tablespoon sugar
- 1 1/2 teaspoons salt
- 1/8 teaspoon pepper
- 1 cup burgundy wine
- 1 cup water
- 8 ounces mushroom -- sliced
- 1 15 oz can artichoke hearts -- drained, quartered
- 1 cup sour cream
- 2 tablespoons flour
- 1 batch sour cream biscuits for topping
Chinese Steam Pork Buns

Place buns on parchment squares and steam 20-30 minutes
- 1 package dry yeast
- 1 tablespoon sugar
- 1/4 cup lukewarm water
- 1 cup milk, heated
- 4 cups flour, sifted
Corn and Tomato Salad

In a large pot of boiling salted water, cook the corn for 3 minutes until the starchiness is just gone
- 5 ears of corn, shucked
- 2 heirloom tomatoes
- 1/2 cup small-diced red onion (1 small onion)
- 3 tablespoons cider vinegar
- 3 tablespoons good olive oil
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup julienned fresh basil leaves
Italian Honey Granola

Preheat an oven to 325°F
- 2 cups rolled oats
- 1/4 cup firmly packed light brown sugar
- 1/4 tsp. ground cinnamon
- 1/2 cup golden raisins
- 1/3 cup slivered almonds
- 4 Tbs. (1/2 stick) unsalted butter
- 4 Tbs. honey
Sicilian Style Pizza Dough

In a food processor, combine the yeast, sugar and warm water and pulse once to mix
- 2 tsp. active dry yeast
- 1 tsp. sugar
- 1 cup warm water
- 2 1/4 cups bread flour
- 2 tsp. salt
- 1 Tbs. olive oil
Pork Lomein

Cook the noodles Bring a large pot of water to a boil over high heat
- 1 Tbs. salt, plus more, to taste
- 1/2 lb. dried lo mein noodles or spaghetti
- 3 Tbs. Asian sesame oil
- 3 large garlic cloves, minced
- 2 carrots, peeled, halved lengthwise and thinly
- sliced crosswise
- 3/4 cup chicken broth
- 2 Tbs. soy sauce
- 2 Tbs. oyster sauce
- 1 Tbs. dry sherry
- 2 cups shredded roast pork (see related recipe
- at right)
- 4 green onions, white and pale green parts only,
- thinly sliced
Muffins--Best Ever

Variations: BLUEBERRY: Use only 1/2 cup and add 1 cup fresh or frozen (drained well) berries
- 1 3/4 cups flour
- 2 tablespoons sugar
- 2 1/2 teaspoons baking powder
- 1 well-beaten egg
- 3/4 cup milk
- 1/3 cup oil
- Sift dry ingredients into bowl, make well into center.
- Add liquid ingredients all at once.
- Stir quickly, just until dry ingredients are moistened.
- Fill greased muffin tins.
- Bake.
