Variations: BLUEBERRY: Use only 1/2 cup and add 1 cup fresh or frozen (drained well) berries

  • 1 3/4 cups flour
  • 2 tablespoons sugar
  • 2 1/2 teaspoons baking powder
  • 1 well-beaten egg
  • 3/4 cup milk
  • 1/3 cup oil
  • Sift dry ingredients into bowl, make well into center.
  • Add liquid ingredients all at once.
  • Stir quickly, just until dry ingredients are moistened.
  • Fill greased muffin tins.
