In a small bowl, beat the sugar, eggs, oil and extracts
- 3/4 cup sugar
- 2 eggs
- 1/4 cup canola oil
- 1-1/2 teaspoons vanilla extract
- 1/2 teaspoon almond extract
- 1-3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup salted pumpkin seeds or pepitas, toasted
- 1/2 cup dried cranberries
Potato Salad-County Line's Secret Potato Salad

Boil potatoes with skin on until you can stick a knife through them
- 51/2 lbs. Idaho No. 1 potatoes (cooked, peeled, cubed)
- 3/4 lbs. yellow onions
- 3/4 lbs. celery
- 1 lb. dill pickle relish
- 11/2 lbs. 100 percent sour cream
- 3/4 lb. Kraft extra heavy mayonnaise
- 2 heaping Tbsp. coarse black pepper
- 1 heaping tsp. garlic salt
- 1 heaping tsp. celery salt
- 1 Tbsp. salt
- paprika for garnish
- parsley for garnish

- 2 tablespoons fresh lime juice
- 1 tablespoon fish sauce
- 1 tablespoon water
- 1 tablespoon chile paste with garlic
- 1 teaspoon sugar
- 2 teaspoons grated peeled fresh ginger

Fried Green Tomatoes

For the tomatoes: In a large shallow dish, add 1/4 cup flour
- FRIED GREEN TOMATOES:
- 1 cup flour, divided
- 1 large egg
- 1/4 cup buttermilk
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 cup cornmeal
- Kosher salt
- Pinch cayenne pepper
- 8 slices green tomato, 3/4 to 1-inch thick (about 2 medium green tomatoes)
- Vegetable oil, for frying

1 In a small bowl, whisk together lemon juice, soy sauce and fish sauce
- 2 tablespoons fresh lemon juice
- 3 tablespoons light soy sauce
- 3 tablespoons fish sauce (nam pla)
- 6 (6 ounce) salmon fillets
- 2 tablespoons vegetable oil
Vegetables, Squash-Acorn Squash with Creamed Onions

Place squash cut side down on baking sheet covered with aluminum foil
- 4 acorn squash -- cut into 1/2's, seed
- 2 pkg frozen pearl onions -- thawed
- 1 cream sauce
- 1 Pinch each -- paprika, nutmeg
Salsa Verde-Tomatillo Salsa

Throw all the ingredients except for the peanut oil into the blender, and blend until it has a smooth consistency
- 12 tomatillos husked and chopped (should be about two cups)
- 3 cloves of garlic, minced
- 3 serrano chiles, stems removed, diced
- 1/4 cup of diced onion
- 1/4 cup of chopped cilantro
- 2 teaspoons of lime juice (or to taste)
- A small pinch of sugar
- Salt to taste
- 2 tablespoons of peanut oil

- 2 3/4 cups flour
- 3/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1 cup soft butter
- 1/2 cup brown sugar -- packed
- 2/3 cup granulated sugar
- 1 teaspoon vanilla
- 2 large eggs -- beaten
- 1/2 cup nuts -- chopped
Swiss Cheese Fondue (The Melting Pot)

1. Mix the flour, Gruyere, & Emmenthaler cheeses together
- 4 OZ White wine
- 1/2 TSP Garlic, chopped
- SQUEEZE Fresh lemon
- 1 C Emmenthaler Swiss cheese, grated
- 1 C Gruyere Swiss cheese, grated
- 1 TBL Flour or cornstarch
- 5 TURNS Fresh ground pepper
- 5 Dashes Nutmeg
- 1 TBL Kirschwasser cherry brandy
- ~Breads, cubed (French, Pumpernickel, Rye)
- ~Granny Smith apples, chunked & washed in citrus water to prevent browning
- ~Vegetables, cut (Cauliflower, Carrots & Celery)
