40-Minute Hamburger Buns

In a mixing bowl, dissolve yeast in warm water
- 2 tablespoons active dry yeast (used rapid rise)
- 1 cup warm water, plus
- 2 tablespoons warm water
- 1/3 cup vegetable oil
- 1/4 cup sugar
- 1 egg
- 1 teaspoon salt
- 3 -3 1/2 cups flour (used 1 cup whole wheat, rest bread flour)

Cream butter and sugar until well blended
- 1/2 cup butter
- 2 cups sugar
- 4 eggs
- 1 cup flour
- 1/2 cup cocoa
- 1/2 cup evaporated milk
- 1 teaspoon vanilla
- 1 cup nuts -- chopped
Guinness Steak and Cheddar Pie

Preheat the oven to 190ºC/375ºF/gas 5
- olive oil
- 3 medium red onions, peeled and chopped
- 3 cloves of garlic, peeled and chopped
- 2 T butter, plus extra for greasing
- 2 carrots, peeled and chopped
- 2 sticks of celery, trimmed and chopped
- 4 field mushrooms, peeled and sliced
- 3 lb chuck or sirloin roast beef, cut into 2cm cubes
- a few sprigs of fresh rosemary, leaves picked and chopped
- sea salt and freshly ground black pepper
- 1 x 440ml can of Guinness
- 2 heaped tablespoons plain flour
- 1 cup freshly grated Cheddar cheese
- 500 g best-quality ready-made all-butter puff pastry
- 1 large free-range or organic egg, beaten
Baked Cornmeal Dumplings

In a bowl, combine the first six ingredients
- 2/3 cup all-purpose flour
- 2/3 cup cornmeal
- 3 tablespoons grated Parmesan cheese
- 2 teaspoons baking powder
- 1 tablespoon minced fresh parsley or 1 teaspoon dried parsley flakes
- 1/4 teaspoon salt
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 quart Chicken Broth
- Additional minced fresh parsley, optional
Plum Crumble

Preheat an oven to 400°F
- 3 1/2 Tbs. unsalted butter
- 1 lb. plums, pitted and thickly sliced
- 2 Tbs. fresh orange juice
- 1/2 tsp. vanilla extract
- 5 Tbs. firmly packed light brown sugar
- 1/3 cup quick-cooking rolled oats
- 1/3 cup all-purpose flour
- 1 1/2 tsp. grated orange zest
- 1 tsp. five-spice powder
Roast Garlic Shepherd Pie

Slice the top off the garlic bulb just enough so that each of the cloves is exposed and place on a roasting tray
- 1 garlic bulb
- 2 tablespoons of olive oil
- 1 tbsp sunflower oil
- 1 large onion , chopped
- 1/4 cup red bell pepper, diced
- 1/2 cup fresh mushrooms, quartered
- 2-3 medium carrots , chopped
- 500 g pack minced lamb, or beef
- 1/2 red wine
- 1 cup beef broth
- 2 tbsp tomato purée
- 2 teaspoons of Worcestershire sauce
- 800 g potatoes, peeled and cut into chunks
- 75 g butter
- 50 ml milk
- Sea salt and ground black pepper to season

COMBINE the flour, yeast and salt in the bowl of an electric mixer or bread machine
- BREAD (baking day):
- 1 1 1 tsp (3 grams) instant yeast
- 2 3/4 2 3/4 3/4 tsp (13 grams) salt
- 1 1/2 1 1/2 90 cups (342 grams) lukewarm water (about 90 degrees)
- Fermented biga:
- BIGA (the morning of the day before baking):
- 1/4 1/4 1/4 tsp active dry yeast
- 1 1 to 115 warm water (110 to 115 degrees)
- 1 1/3 1 1/3 1/3 cups (200 grams) unbleached bread flour
- 2/3 2/3 2/3 cup (100 grams) unbleached all-purpose flour
- 2 2 2 TBS (15 grams) whole-wheat flour, preferably coarsely ground
- 2 2 2 TBS (15 grams) whole-grain rye flour, preferably coarsely ground
- 3/4 3/4 3/4 cup (185 grams) water (see method for temperature)
- Large Large mixing bowl, baking stones or tiles, parchment paper
- 5 to 10 into warm water, stir and let stand for 5 to 10 minutes.

- 1 teaspoon salt
- 1 tablespoon olive oil
- cornmeal for dusti
Cumin Shrimp with Roasted Poblano Cream Sauce

Roast the peppers in the oven, on the grill or other open flame of your choice, allow them to cool and remove skins
- Sauce:
- 3 poblano peppers, roasted skins peeled
- 1 clove garlic
- 4 c milk, heavy cream, or half and half
- 1 medium onion, diced
- 1/3 c flour
- 4 tbsp butter
- 1/2 c grated Parmesan (Romano or Grana Padano can substitute)

- 1/4 tsp nutmeg

- Cumin Shrimp:
- Olive oil
- 3/4 lb to 1 lb shrimp
- salt
- pepper
- cumin
- I served over spahetti squash, and sprinkled with cotija cheese and pepitas.
