Saltgrass Shiner Bock Beer Bread

Dissolve in a large mixing bowl yeast with warm water, add honey and stir
- 1 1/2 -1 3/4 C. Shiner Bock Beer (flat)
- 2 1/2 C. Whole Wheat Flour
- 2 tsp. Dry Active Yeast
- 1/4 C. Warm Water ( not hot )
- 1/2 tsp. Salt
- 1/4 C. Honey
- 1/4 C. Vegetable Oil
- 1 1/2 C. All Purpose Flour
Bleu Cheese Popovers

Position a rack in the lower third of an oven and preheat to 450°F
- 1 cup all-purpose flour
- 1/2 tsp. salt
- 1/4 tsp. freshly ground white pepper
- 1 Tbs. finely chopped fresh flat-leaf parsley
- 1 1/4 cups milk, at room temperature
- 2 eggs, at room temperature
- 1 Tbs. unsalted butter, melted
- 3 oz. Roquefort or other strong-flavored,
- crumbly blue cheese, crumbled
Guinness Corned Beef

Rinse corned beef under cold water, and pat dry
- 4 lbs flat cut corned beef brisket
- 1 (12 ounce) bottle Guinness draught (make sure you use Guinness draught, not stout as it will turn it bitter!)
- 1 medium yellow onion, peeled and cut into wedges
- 3 garlic cloves, minced
- 1 bay leaf
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground black pepper
- 1 head cabbage, cut into wedges, rinsed and drained
- 6 medium white potatoes, peeled and quartered
- 1-2 lb carrot, peeled and cut into 3-inch pieces
- English mustard and brown sugar for glaze
Italian Pot Roast

- 3-4 pounds beef, something like rump roast, top sirloin roast, blade roast or beef brisket.
- 1-2 tablespoons of olive oil
- 1 sprig of rosemary, you can chop the leaves if you'd like
- 1/2 cup of carrots diced roughly
- 1/2 cup of red onions diced roughly
- 3/4 cup of peas
- 2-3 cloves of chopped garlic
- 4-5 cups of red wine (we use our homemade wine, but you can use any red you have around the house)
- 1/2 cup of whole tomatoes (we, again, use our homemade peeled and canned tomatoes)
- 1 bay leaf
- Kosher Salt and ground black pepper
Chocolate Guinness Cake

For the cake: Heat oven to 350 degrees
- For the cake:
- Butter for pan
- 1 cup Guinness stout
- 10 tablespoons (1 stick plus 2 tablespoons) unsalted butter
- 3/8 cup unsweetened cocoa
- 2 cups superfine sugar (I have used regular granulated sugar with no ill effects)
- 3/8 cup sour cream
- 2 large eggs
- 1 tablespoon vanilla extract
- 2 cups all-purpose flour
- 2 1/2 teaspoons baking soda
- For the topping:
- 1 1/4 cups confectioners' sugar
- 8 ounces cream cheese, at room temperature
- 1/2 cup heavy cream

- 2 eggs -- beaten
- 1 cup brown sugar
- 1 tablespoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon mace
- 1/2 teaspoon cream of tartar
- 1 1/2 cups flour
- 1/2 cup nuts -- finely chopped
- 1/2 cu maraschino cherries -- finely chopped
Sausages with Tomato-Olive Ragout over Polenta

In a heavy soup pot over high heat, combine the tomatoes, onion and garlic cloves
- 6 cups peeled, seeded and chopped tomatoes
- (fresh or canned)
- 1 small red onion, peeled
- 4 garlic cloves
- Salt and freshly ground pepper, to taste
- 2 lb. Italian pork sausages, preferably flavored
- with fennel seeds
- 8 1/2 cups water
- 2 cups polenta
- 1 tsp. chopped fresh rosemary
- 3 Tbs. unsalted butter
- 3/4 cup pitted brine-cured black olives such as
- Kalamata or niçoise
- Wedge of Parmigiano-Reggiano cheese for shaving
- 1 1/2 Tbs. coarsely chopped fresh flat-leaf parsley
Raspberry-Balsamic Glazed Chicken

Heat oil in a large nonstick skillet coated with cooking spray over medium-high heat until hot
- 1 teaspoon vegetable oil
- vegetable cooking spray
- 1/2 cup red onion
- 1 1/2 teaspoon fresh thyme
- 1/2 teaspoon salt -- divided
- 4 4 ounce skinless boneless chicken breast halves
- 1/3 cup raspberry preserves
- 2 tablespoons balsamic vinegar
- 1/4 teaspoon pepper
Autumn Soup

Brown onion. Add celery, potatoes and cook 5 minutes more
- 1/2 lb ground beef
- 1/2 cup onion -- chopped
- 2 cups hot water
- 3/4 cup celery -- chopped
- 3/4 cup carrots -- chopped
- 1 cup peeled potatoes -- cubed
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon crumbled oregano -- dried
- 1 pinch of basil
- 3 fresh, whole tomatoes -- chopped
- 1/2 cup fresh green beans -- snipped, optional

- Two cups of all-purpose flour (can make them whole wheat by substituting one cup of whole-wheat flour for white flour)
- 1 1/2 teaspoons of baking powder
