Rinse corned beef under cold water, and pat dry

  • 4 lbs flat cut corned beef brisket
  • 1 (12 ounce) bottle Guinness draught (make sure you use Guinness draught, not stout as it will turn it bitter!)
  • 1 medium yellow onion, peeled and cut into wedges
  • 3 garlic cloves, minced
  • 1 bay leaf
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground black pepper
  • 1 head cabbage, cut into wedges, rinsed and drained
  • 6 medium white potatoes, peeled and quartered
  • 1-2 lb carrot, peeled and cut into 3-inch pieces
  • English mustard and brown sugar for glaze

  • 3-4 pounds beef, something like rump roast, top sirloin roast, blade roast or beef brisket.
  • 1-2 tablespoons of olive oil
  • 1 sprig of rosemary, you can chop the leaves if you'd like

  • 3/4 cup of peas
  • 2-3 cloves of chopped garlic
  • 4-5 cups of red wine (we use our homemade wine, but you can use any red you have around the house)
  • 1/2 cup of whole tomatoes (we, again, use our homemade peeled and canned tomatoes)
  • 1 bay leaf
  • Kosher Salt and ground black pepper

  • 10 tablespoons (1 stick plus 2 tablespoons) unsalted butter
