Chili Con Carne

Cook and stir ground beef, onion, and garlic in heavy iron pot or saucepan until beef is brown; drain
- 1 pound ground beef
- 1 large onion, chopped ( about 1 cup)
- 2 cloves garlic, crushed
- 1 tablespoon chili powder
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano leaves
- 1 teaspoon cocoa
- 1/2 teaspoon red pepper sauce
- 1 can (16 oz) diced tomatoes, undrained
- 1 can (15 1/2 oz) pinto beans, undrained
Carne Guisada

Heat oil in skillet, medium heat
- 2 pounds beef tips -- cut in 1" cubes
- 3 cloves garlic -- minced
- 1 large fresh tomato -- diced
- 3 tablespoons flour
- 1/4 cup oil
- 3 cups water
- 1 dash salt, pepper
Sweet Roll Dough-Overnight

Turn dough out onto counter
- Stir together in a bowl:
- 2 c. flour
- 1/2 c. sugar
- 1 t. salt
- 2 T. yeast
- Cut in 1 stick of butter or margarine.
- Pour in 1 1/2 c. very hot water.
- Mix on medium speed for 2 minutes.
- Add:
- 2 eggs (at room temperature)
- 1 c. flour
- Mix on high speed for 1 minute.
- Gradually add in 2-3 more cups of flour until the dough is thick and elastic, pulling away from the side of the bowl.
Baked Egg Tarlets with Fennel Sausage

Directions: To make the pastry by hand, in a large bowl, combine the flour and salt
- Ingredients:
- For the pastry:
- 1 cup all-purpose flour
- 1/2 tsp. salt
- 8 Tbs. (1 stick) cold unsalted butter, cut into 1/2-inch pieces
- 1 egg, lightly beaten
- For the filling:
- 1/2 lb. fennel sausages, casing removed and meat crumbled
- 4 eggs
- Salt and freshly ground pepper, to taste
- 2 Tbs. grated Parmigiano-Reggiano cheese
- 1 Tbs. chopped fresh flat-leaf parsley
Biscotti-Pumpkin

1 Preheat oven to 350°F. Sift together the flour, salt, sugar, baking powder, and spices into a large bowl
- 2 1/2 cups of flour
- 1 cup of sugar
- 1 teaspoon of baking powder
- 1 teaspoon of cinnamon
- 1/2 teaspoon of nutmeg
- Pinch of ginger
- Pinch of cloves
- Pinch of salt
- 2 eggs
- 1/2 cup of pumpkin purée
- 1 teaspoon of vanilla extract
- 1/2 cup chopped pecans, if desired

Combine bread crumbs and parmesan cheese
- 1 chicken -- cut-up
- 1 cup parmesan cheese -- shredded
- 1 cup bread crumbs -- seasoned with herbs
- 1 stick butter -- melted
- paprika
- slivered almonds or sliced olives -- for garnish
Country Cinnamon Rolls

To make the streusel filling, in a small bowl, combine the brown sugar, flour, granulated sugar and cinnamon
- For the streusel filling:
- 1 cup firmly packed light brown sugar
- 1/3 cup unbleached all-purpose flour
- 3 Tbs. granulated sugar
- 1 Tbs. ground cinnamon
- 8 Tbs. (1 stick) cold unsalted butter
- For the rolls:
- 4 1/2 to 5 cups unbleached all-purpose flour,
- plus more for sprinkling
- 4 tsp. active dry yeast
- 1/3 cup granulated sugar
- 1 1/2 tsp. salt
- 1 cup hot milk (125°F)
- 6 Tbs. (3/4 stick) unsalted butter, cut into
- pieces, at room temperature, plus more
- for serving
- 3 eggs, at room temperature
- 1/2 cup raisins or dried currants, or 1/2 cup
- dried cranberries, soaked in hot water for
- 10 minutes and drained
- 1/2 cup chopped pecans
- 1 1/2 Tbs. milk or half-and-half

- 1/4 cup red wine vinegar
- 1 tsp. dried oregano
- 1/2 tsp. dry mustard

- 2 pkg dry yeast
- 1 cup warm water
- 1/2 cup Parmesan cheese -- grated
- 1 tablespoon sugar
- 1 tablespoon salt
- 2 tablespoons olive oil
- 1 egg -- at room temperature
- 3 3/4 cups flour
Eggplant Flatbread

Preheat oven to 450 degrees fahrenheit
- For the dough
- 1 2/3 cups all purpose flour
- 1/2 tsp salt
- 2 tsp baking powder
- 1/2 tbsp olive oil
- 1 egg yolk
- 3/4 cup water
- Topping
- 1 red pepper
- 1 green pepper
- 1 medium eggplant
- 1 large sweet onion, very thinly sliced
- 1 clove garlic, minced fine
- 12 black olives, pitted and coarsely chopped
- salt and pepper to taste
- 2 large ripe tomatoes, thinly sliced
- 1 tbsp butter
- 5 tbsp olive oil, plus a tad more to grease the pan
