Beef Broth, Julia's recipe

Preheat your oven to 450 degrees
- 4 pounds beef bones (cut into 3 inch pieces)
- 2 each large carrots, onions, and celery ribs (roughly chopped)
- 7 quarts cold water (if you have lousy tap water, buy bottled)
- 3 large cloves fresh garlic (Smashed or as Julia would say," WHAM, ")
- 1/2 cup canned Italian plum tomato (roughly chopped)
- 1 each herb bouquet
- Tie, in a piece of cheese cloth, 4 allspice berries, 6 black peppercorns, 1/2 tsp dried thyme, 1 small bay leaf, and 4 sprigs of fresh parsley (roughly chopped
Breakfast Enchiladas with Salsa Verde Recipe

To make the salsa verde: Soak tomatillos in warm water for a few minutes just to loosen the dry husks
- Salsa Verde:
- 1 1/2 pounds tomatillos
- 2 jalapeno chiles, seeded and chopped
- 1/4 cup chopped sweet onion
- 1 to 2 cloves garlic, roughly chopped
- 1 teaspoon white wine vinegar
- 1/2 teaspoon salt
- 1/2 cup chopped cilantro
- Scrambled Eggs:
- Olive oil cooking spray
- 6 extra-large eggs
- 1 tablespoon water
- 2 ounces queso fresco or cream cheese, cut into small pieces
- 2 cooked and diced red-skinned potatoes or
- 1/2 cup cooked crumbled sausage (optional)
- 8 flour tortillas, warmed
- 1 cup shredded Monterey jack cheese

Preheat oven to 425 F (220 C)
- 2 cups (10 oz) unbleached all-purpose flour
- 1 Tbsp baking powder
- 3 Tbsp sugar (more for sprinkling)
- 1/2 tsp salt
- 5 Tbsp (2.5oz) cold, unsalted butter
- 1/2 cup dried currants *
- 1 cup heavy cream (more for brushing)
- *Currants can be replaced with raisins although I’m not so keen on raisins. A variation that I like is to add 1 Tbsp grated orange zest and 1/2 cup dried cranberries instead of currants.
Chicken Souflaki

- 3 Tbs. extra-virgin olive oil
- 2 Tbs. dry white wine
- 1 Tbs. lemon juice
- 1/4 cup minced yellow onion
- 1 garlic clove, minced
- 2 bay leaves, broken or chopped into tiny pieces
- 1 tsp. dried oregano
- Salt and freshly ground pepper, to taste
- 1 lb. boneless, skinless chicken, cut into 1-inch pieces
- Lemon wedges for garnish
- Flat-leaf parsley leaves for garnish
Snap Beans with Carmelized Onions

Directions: Preheat an oven to 400°F
- Ingredients:
- Other types of wild or cultivated mushrooms, such as portobello, white button, chanterelle or oyster, would be equally delicious in this recipe. Choose a variety that looks freshest at your local farm
- To save time, you can toast and chop the hazelnuts and roast the mushrooms and garlic a few days in advance; cover and refrigerate the mushroom mixture. Just before serving, bring the mushroom mixture
- 1 lb. cremini mushrooms, brushed clean and quartered
- 2 Tbs. extra-virgin olive oil
- Salt and freshly ground pepper, to taste

- 1 1/2 pounds boneless Boston butt pork roast, trimmed and cut into 1-inch cubes
- 1/4 cup cold water
- 1 teaspoon salt
- 1 teaspoon dark brown sugar
- 1 teaspoon minced fresh or 1/4 teaspoon dried rubbed sage
- 1 teaspoon minced fresh or 1/4 teaspoon dried thyme
- 1 teaspoon crushed red pepper
- 1 teaspoon freshly ground black pepper
- 1/2 teaspoon ground coriander
- 1/2 teaspoon hot pepper sauce (such as Tabasco)
