- 1/2 teaspoon sugar

- Fresh chopped tomatoes (optional)

Fajita Frittata with Avocado Salsa

- ■1 pound skirt or flank steak, thinly sliced
- ■2 teaspoons cumin
- ■1/2 teaspoon chili powder
- ■1 teaspoon kosher salt
- ■2 tablespoons olive oil
- ■2 cloves of garlic, finely chopped
- ■1-2 poblano or green bell peppers, cut into thin rounds or strips
- ■1 red bell pepper, cut into thin rounds or strips
- ■10 eggs, whisked
- ■1 small bunch cilantro, roughly chopped
- ■2-3 avocados, cut into small chunks
- ■2 green onions, sliced
- ■1 jalapeno pepper, finely chopped (optional)
- ■juice of one lime juice
- ■sea salt to taste
Feta-Stuffed Chicken Breasts

- 1 tablespoon snipped dried tomatoes (not oil-packed)
- 4 skinless, boneless chicken breast halves (1 to 1-1/2 pounds total)
- 1/4 cup crumbled feta cheese (1 ounce)
- 2 tablespoons softened fat-free cream cheese (1 ounce)
- 2 teaspoons snipped fresh basil or 1/2 teaspoon dried basil, crushed
- 1/8 teaspoon ground black pepper
- 1 teaspoon olive oil or cooking oil
- Fresh basil sprigs (optional)
Pumpkin Pie

This pie was sooooo goooooddddd :) Had plenty of flavor & wasn't too sweet
- 1 - 15 oz. can pumpkin puree
- 3/4 cup packed brown sugar
- 1/4 teaspoon salt
- 3/4 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ground cloves
- 2 eggs
- 1 egg yolk
- 1/2 cup evaporated milk
- 1/2 cup heavy cream
- 1 - 9 inch unbaked pie crust
Strawberry-Spinach Salad with Citrus Dressing

- 1/8 teaspoon salt
- 1 cup reduced-sodium chicken broth
- Warm Citrus Dressing
- 6 cups torn fresh spinach and/or watercress
- 2 cups halved strawberries
- 1/4 cup chopped pecans, toasted
Chicken with Capers

This was very good. Couple notes - I used almond meal instead of bread crumbs - worked very well
- 4 skinless, boneless chicken breast halves (about 1-1/2 lb.)
- 1 tablespoon Dijon-style mustard
- 1/4 cup seasoned fine dry bread crumbs
- 8 ounces green beans, trimmed
- 2 lemons, 1 sliced and 1 juiced
- 1 tablespoon capers
Braised Peppercorn Beef Shank

This is extra yummy :) Dev loves it!! This is very rich - you can't eat a ton of it in one sitting
- 1 - 1 1/2 lb crosscut beef shank with bone
- 1 - 2 Tablespoons crushed black pepper
- generous pinch of sea salt
- 4 - 5 peeled garlic cloves
- 4 - 5 rosemary sprigs
- 1/2 bottle dry red wine
Steak and Vegetable Braciole

- 1/3 cup chopped zucchini
- 1/3 cup chopped red or green sweet pepper
- 1/4 cup sliced green onions (2)
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon snipped fresh parsley
- 1 clove garlic, minced
- 1/4 teaspoon ground black pepper
- 6 tenderized beef round steaks (about 2 pounds total)*
- 2 cups purchased marinara sauce
- Hot cooked pasta (optional)
Juicy Roasted Turkey Breast

This was so, so yummy :) This would make great meat for cold snacking the next day or sandwiches :)
- 1 (4 lb) bone-in, skin-on turkey breast
- 3 tablespoons butter
- 1 teaspoon salt
- 1 teaspoon dried thyme leaves
- 1/2 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon pepper
- 1 cup chicken broth
