- 1/4 cup mayonnaise, regular or reduced-fat
- 2 Tbsp. Dijon-style mustard
- 4 ribs celery , cut into 1/4-inch-thick slices
- 1 small red sweet pepper, seeded and cut into 1/4-inch dice
- 1 cup diced (1/2-inch) ripe fresh pineapple
- 2 scallions , white and green parts, finely chopped
- 1/2 cup coarsely chopped pecans , toasted (2 oz.)

Easy Roasted Vegetable Blender Pasta Sauce

- 8 cloves garlic
- 1 red pepper, chunked
- 1/4 cup olive oil
- fresh herbs (oregano, basil, thyme)
- Salt to taste, I would start with 1 teaspoon

- 2 teaspoons blackened steak seasoning
- 1 tablespoon olive oil
- 2 tablespoons rice vinegar
- 2 tablespoons olive oil
- 1/4 teaspoon ground cumin

- 1 avocado, halved, seeded, peeled, and chopped
