Creamy Chicken Noodle Soup

- 1 32 ounce containerreduced-sodium chicken broth
- 3 cups water
- 2 1/2 cups chopped cooked chicken (about 12 ounces)
- 1 1/2 cups sliced carrots (3 medium)
- 1 1/2 cups sliced celery (3 stalks)
- 1 1/2 cups mushrooms, sliced (4 ounces)
- 1/4 cup chopped onion
- 1 1/2 teaspoons dried thyme, crushed
- 3/4 teaspoon garlic pepper
- 3 ounces reduced-fat cream cheese (Neufchatel), cut up
- 2 cups dried egg noodles
Bacon Apple Smothered Pork Chops

- 3 slices thick cut bacon (use sugar-free bacon if you’re on a Whole30), cut into 1/4 inch slices
- 2 tablespoons arrowroot powder
- 1 1/2 cups bone broth or chicken stock
- 1 teaspoon fish sauce
- 5 (3/4-inch-thick) bone-in pork chops (about 2 pounds total)
- Kosher salt
- Freshly ground black pepper
- 1 tablespoon ghee
- 1 large yellow onion, thinly sliced
- 1 apple, peeled, cored, and thinly sliced
- 2 garlic cloves, minced
- 2 fresh thyme sprigs
Zucchini Boats with Bacon Gremolata

- Ingredients:
- 4 medium-large zucchini (6 to 7 ounces each)
- 2 tablespoons lemon juice
- 4 teaspoons olive oil
- 3 large cloves garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 recipe Bacon Gremolata
- Bacon Gremolata
- 16 slices bacon, crisp-cooked, drained, and finely crumbled, or 1 cup finely chopped Canadian-style bacon
- 1 cup finely shredded Parmesan and/or Romano cheese (4 ounces)
- 1/4 cup snipped fresh basil
- 1/4 cup finely chopped pepperoncini salad pepper or fresh jalapeno chile pepper*
- 4 teaspoons finely shredded lemon peel
- 2 cloves garlic, minced
- 1/2 teaspoon black pepper
- Directions
- 1 . In a small bowl stir together bacon, cheese, basil, pepperoncini, lemon peel, garlic, and black pepper.
Black Bean Pico De Gallo

Combine all ingredients and chill
- 2 cups cooked black beans (if using canned, rinse) (8 carbs)
- 4 cups tomatoes, diced (2 carbs)
- 1 1/2 cups red onion, diced (1 carb)
- 1/2 cup green onion, chopped
- 1/2 cup fresh cilantro, chopped
- 2 tablespoons jalapeno pepper, minced
- 2 tablespoons fresh lemon juice
- 1 tablespoon chili powder
- 1/2 teaspoon salt
