Fruit Bowl Salad with Honey-Mint Dressing

- 2 cups cooked rice*
- 1 1/2 cups frozen peas
- 1 10 3/4ounce can condensed cream of chicken soup
- 1 10 3/4ounce can condensed fiesta nacho cheese soup
- 1 10 - 10 1/2ounce can diced tomatoes and green chilies
- 1/2 cup milk
- 1/2 teaspoon crushed red pepper (optional)
- 1/2 cup shredded cheddar cheese (2 oz.)

- 1/4 cup cider vinegar or white wine vinegar
- 1 tablespoon snipped fresh thyme
- 1 teaspoon sugar
- 1 mediumcucumber, cut in thin ribbons
- 2 tomatoes, sliced
- 1/2 cup pitted green olives, halved and/or sliced
- 4 ounces feta cheese (optional)
