Nutty Pumpkin-Pie Pudding

- Nonstick cooking spray
- 1 15 ounce can pumpkin
- 1 5 ounce can evaporated milk (2/3 cup)
- 1/3 cup sugar
- 2 tablespoons pumpkin pie spice
- 1 1-layer-size yellow cake mix
- 1 cup pecans or walnuts, toasted and chopped
- 1/4 cup butter, melted
- Frozen whipped dessert topping, thawed (optional)
Baked Cilantro Lime Chicken Wings

- For the marinade:
- 20 chicken wings
- 5 limes, juiced
- 1/2 cup cilantro, chopped
- 2 cloves minced garlic
- salt/pepper to taste
Chicken Florentine Artichoke Bake

- 8 ounces dried bow tie pasta
- 1 small onion, chopped
- 1 tablespoon butter
- 2 eggs
- 1 1/4 cups milk
- 1 teaspoon dried Italian seasoning
- 1/4 - 1/2 teaspoon crushed red pepper (optional)
- 2 cups chopped cooked chicken
- 2 cups shredded Monterey Jack cheese (8 oz.)
- 1 14 ounce can artichoke hearts, drained and quartered
- 1 10 ounce frozen chopped spinach, thawed and well drained
- 1/2 cup oil-packed dried tomatoes, drained and chopped
- 1/4 cup grated Parmesan cheese
- 1/2 cup soft bread crumbs
- 1/2 teaspoon paprika
- 1 tablespoon butter, melted
Molasses-Glazed Pork Tenderloin

- 1/4 cup finely chopped prosciutto or 2 slices bacon, coarsely chopped
- 2 9-ounce packages frozen cut green beans
- 1/2 cup chopped onion
- 3/4 cup water
- 1 tablespoon olive oil
- 12 ounces pork tenderloin, cut into 1/2-inch-thick slices (11 to 12 slices)
- 1/2 cup orange juice
- 3 tablespoons molasses
- 1 teaspoon cornstarch
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Steamed spinach or turnip greens
Cajun Pork

- 2 1/2 - 3 pounds boneless pork shoulder, trimmed and cut into 1-inch cubes
- 2 medium yellow sweet peppers, cut into 1-inch pieces
- 1 tablespoon Cajun seasoning
- 1 14 1/2 ounce can diced tomatoes with green pepper and onion, undrained
- 1 16 ounce package frozen cut okra
- 1 6 ounce package quick-cooking brown rice, cooked according to package
- Bottled hot pepper sauce (optional)
Tomato Basil Soup

- 2 tbsp butter
- 1 onion, diced
- 8 cups chopped fresh tomatoes (or 2 pint-sized cans of diced tomatoes, drained)
- 1 quart chicken broth
- salt, to taste
- 2 tbsp. balsamic vinegar
- 1/2 tsp. honey
- 1/4 cup fresh chopped basil (about 15-20 leaves)
- 2 cups heavy cream (from grass-fed cows)
- sour cream (optional)
Curried Crab Salad

- 2 cups cut-up fresh fruit (such as pineapple, cantaloupe, honeydew melon, and/or strawberries)
- 1 6 ounce package frozen crabmeat, thawed
- 3/4 cup sliced celery
- 1/4 cup light mayonnaise dressing or salad dressing
- 1/4 cup plain low-fat yogurt
- 2 tablespoons fat-free milk
- 1/2 teaspoon curry powder
- 4 cups torn mixed salad greens
Paleo Apple and Bacon Rosemary Pork Burgers

- 1 apples, cored and diced
- 1-2 tablespoons rosemary (depending how much you like rosemary)

Sole with Caponata

This was very good. We used tilapia instead of sole, don't care for sole
- 4 4-ounce fresh or frozen skinless sole fillets
- 1 14-1/2-ounce can Italian-style stewed tomatoes, undrained
- 2 tablespoons olive oil
- 2 cups chopped, peeled eggplant
- 1 small yellow, green, or red sweet pepper, coarsely chopped
- 1/4 cup bottled picante sauce
- 1/2 teaspoon bottled minced garlic (1 clove)
- 1 tablespoon balsamic vinegar
- 1/8 teaspoon salt
- 1/8 teaspoon ground black pepper
- Lemon wedges (optional)
Turkey Tortilla Soup

- 1 cup purchased red or green salsa
- 2 14-ounces cans reduced sodium chicken broth
- 2 cups cubed cooked turkey (12 ounces)

- Lime wedges (optional)
- Sour cream and cilantro (optional)
