Chipotle Seasoning Mix

- 1 T ground chipotle chile pepper
- 1 T garlic powder
- 1 T onion powder
- 1 T ground coriander
- 2 t paprika (smoked paprika preferred)
- 1 t black pepper
- 1 t cumin
- 1 t oregano (mexican oregano preferred)
- 1/2 t seasoned salt
- 1/2 t cayenne pepper

- 3/4 cup soft bread crumbs (1 slice)
- 2 tablespoons sliced green onion
- 2 tablespoons mayonnaise or salad dressing

- 2 6 1/2-ounce cans crabmeat, drained, flaked, and cartilage removed

Hot and Sour Stir-Fry Pork and Cabbage

This is Soooooo good!! It is very spicy though
- Spices:
- 12 oz. lean pork, large dice (12 protein)
- 2 teaspoons cornstarch (1/2 carb)
- 2 cups cauliflower pieces (1/2 carb)
- 1 1/2 cups onion, sliced (1 carb)
- 1 1/2 cup scallions, chopped (1 carb)
- 4 cups cabbage, shredded (1 carb)
- 4 teaspoons olive oil (12 fat)
- 1 1/2 cup chicken stock
- 3 tablespoons soy sauce
- 1/4 teaspoon black pepper
- 6 tablespoons jalapeno peppers, diced (if you don't like spicy, use less)
- 3 tablespoons cider vinegar
- 2 tablespoons minced garlic
- 2 tablespoons fresh gingerroot, minced

Crispy Honey-Mustard Pork Chops

- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup honey
- 1/4 cup stone-ground mustard
- 2 tablespoons panko (Japanese-style bread crumbs)
- 2 teaspoons chopped fresh marjoram
- 1/8 teaspoon onion powder
- 1/4 cup extra-virgin olive oil
Chorizo-Chile Burger

- 1 recipe Poblano-Avocado Spread, or purchased Avocado spread
- 1 medium red onion, thinly sliced
- Juice of 1 lime (2 Tbsp.)
- 1 tablespoon of white vinegar
- 1/2 teaspoon of ground cumin
- Kosher or sea salt and freshly ground black pepper, to taste
- 6 ounces of uncooked chorizo sausage
- 1 1/4 pounds of ground beef chuck
- 6 hamburger buns
Butternut Squash Bisque

This was very tasty - It had a bit of a kick to it (I think we may have used 3 chipotle peppers) & not overly sweet
- 1 2-1/2- to 3-lb. butternut squash or 3, 12-oz. pkgs. frozen cooked winter squash, thawed
- 1/4 cup butter
- 1 medium onion, chopped
- 1 large carrot, coarsely chopped
- 1 stalk celery, coarsely chopped
- 2 cloves garlic, minced
- 2 large Braeburn or Gala apples, peeled, cored and chopped
- 1 48-oz. box reduced-sodium chicken broth
- 1 cup apple cider or apple juice
- 2 canned chipotle peppers in adobo sauce, coarsely chopped
- 1/2 cup sour cream
- 3 oz. smoked Gouda or smoked cheddar cheese, finely shredded
- Crumbled cooked bacon, celery leaves, and/or shaved Gouda cheese (optional)
