- 1 carrot (5.8 carbs)
- 1 stalk celery
- 3 florettes fresh broccoli
- 1 box frozen spinach (10.5 carbs)
- 1- 14 oz. can diced tomatoes (21 carbs)
- 1/2 medium cucumber
- 1 cup vegetable broth
- 1 tablespoon fresh garlic
- 5 - 6 thin slices fresh ginger
- 1/4 teaspoon sage
- 1/4 teaspoon cumin
- 1/4 teaspoon basil
- Tabasco sauce to taste
Apple and Arugula Bison Burgers

- 3 tablespoons coconut oil or butter
- 1 large yellow onion, thinly sliced
- salt, to taste
- 1 pound ground bison (or other ground meat such as beef, turkey or chicken)
- 1 eggs
- 1 small green apple, finely chopped
- 1/2 cup chopped arugula + extra for garnishing burgers
- 2 garlic cloves, minced
- 1/4 teaspoon coarse sea salt
- 1/8 teaspoon garlic powder
- 1/8 teaspoon black pepper
- extra coconut oil or butter, to coat pan

Spaghetti Sauce Italiano

- 1 cup chopped onion (1 large)
- 2 cloves garlic, minced
- 2 14-1/2-ounce cans diced tomatoes, undrained
- 1 6-ounce can tomato paste
- 2 4-ounce cans mushroom stems and pieces, drained
- 1 bay leaf
- 2 teaspoons dried Italian seasoning, crushed
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup chopped green sweet pepper (1 large)
- 12 to 16 ounces dried spaghetti, cooked and drained
- Finely shredded or grated Parmesan cheese (optional)

- 1 tablespoon raw honey
- 1/4 cup warm water (should feel warm on the inside of your wrist, but not burn)
- 3/4 cup almond flour
- 3/4 cup tapioca starch
- 3/4 teaspoon sea salt
- 1 tablespoon olive oil (or other melted fat if you’re opposed to heating olive oil)
- 1 tablespoon egg whites (less than one egg)
- 1 1/2 teaspoons apple cider vinegar
- and of course your favorite toppings!

- 1 teaspoon vanilla extract
- 1 14 ounce can pumpkin puree
- 2 teaspoons pumpkin pie spice
- For the cookie crust
- 1 1/2 cups almond flour
- 1/4 cup + 1 tablespoon coconut flour
- 1/4 cup + 1 tablespoon tapioca flour
- 1/2 teaspoon baking soda
- 1/4 cup ghee
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract

- 1 tablespoon olive oil
- 1 15 ounce canGreat Northern or navy beans, rinsed and drained
- 12 ounces fresh tomatillos, husked and chopped, or two 11-ounce cans tomatillos, rinsed, drained, and coarsely chopped
- 1/2 cup chopped onion (1 medium)
- 1 4 ounce candiced green chile peppers, undrained
- 2 cloves garlic, minced
- 3/4 teaspoon ground cumin
- 1/2 teaspoon salt
- 1 14 ounce canchicken broth
- 1 cup chopped fresh spinach leaves
- 2 teaspoons lime juice
- Dairy sour cream (optional)
- Snipped fresh cilantro (optional)
Gluten Free Banana Bread

blend, pour in loaf pan, bake at like 400 for about 50 minutes
- 2 c. almond meal, or 1c. almond meal and 1 c. coconut
- 1/2 c. chopped walnuts [optional, but so tasty]
