Pineapple Fried Rice with Shrimp & Chicken

Tequila-Honey-Lime Marinated Drumsticks

- 1/2 cup untoasted walnut oil
- 1/2 cup honey
- 2 to 3 limes (1 tsp. finely shredded peel plus 1/4 cup juice)
- 1 tsp. kosher salt
- Optional add-ins: 2 cloves garlic, minced; 1/2 tsp. ground cumin; 2 shallots, minced
- 12 chicken drumsticks
- Lime and/or orange slices
- Fresh cilantro
Potato Salad with Sausage and Grainy Mustard Dressing

- 1 lb small red potatoes, halved
- 1 lb small yellow new potatoes, halved
- 3 T cider vinegar
- 1 T plus 1/2 t kosher salt
- 1/4 cup coarse-grain mustard
- 3 T cider vinegar
- 3 T sugar
- 1/4 cup peanut or vegetable oil
- 1/3 cup dry cured sausage, such as sopressata, pepperoni, or salami, cut in 1/4 to 1/2 inch pieces
- 1/2 cup torn fresh curly-leaf parsley
- 2 T thinly sliced green onions
Buffalo Chicken Hash

- 2 tbsp coconut oil, divided
- 1 large sweet potato or yam (I used a Japanese yam)
- 1 lb chicken thighs, diced (or leftover rotisserie chicken)
- 1 small onion, diced
- 3 cloves garlic, minced
- 1/4 cup clean hot sauce (I use Franks Original Red Hot)
- 4-6 eggs (preferably pastured)
- 1 tbsp water
- 1-2 tbsp parsley or chives, minced (optional)
- Salt & pepper, to taste
Ham with Leeks and Dilled Potatoes

- 2 tablespoons vegetable oil
- 3 cups packaged refrigerated diced potatoes
- 2 medium leeks, thinly sliced
- 1 1/2 cups cubed cooked ham (8 ounces)
- 8 ounces fresh asparagus spears, trimmed and cut into 2-inch lengths
- 1/3 cup water
- Freshly ground black pepper
- 1 cup shredded Havarti cheese with dill (4 ounces)
Primal Cookies

Preheat oven to 350 degrees
- Dry ingredients:
- •1 ¼ cup almond flour
- •1/8 tsp baking soda
- •few shakes of salt
- Wet ingredients:
- •5 tbsp of melted butter or oil, such as coconut oil (you might have to heat it to get it liquid)
- •3 tbsp of sweetener (such as agave nectar, honey), or ¼ cup of erythritol. If you’d prefer not to use any sweetener, try just adding a mashed, ripe banana
- •2 tsp vanilla extract, coconut extract, or any other kind of extract
- Other Stuff:
- (These are just ideas, I recommend digging around in your pantry and experimenting with additional ingredients, too.)
- •1 mashed banana (add to wet ingredients)
- •dark chocolate chunks/chips
- •cacao nibs
- •2 tbsp cocoa powder (add to dry ingredients)
- •dried coconut
- •pumpkin seeds
- •raisins
- •nuts
- •almond butter (add to wet ingredients)
- •ginger (add to dry ingredients)
- •cinnamon (add to dry ingredients)
- •nutmeg (add to dry ingredients)
- •molasses (add to wet ingredients)
- *Note: if you add in additional ‘wet’ ingredients to the mix, you may have to balance out the moisture with an additional ¼ cup or so of the almond flour.
Peppered Chicken in Marsala Sauce

- 2 teaspoons olive oil or cooking oil
- 1 teaspoon coarsely ground black pepper
- 1/4 teaspoon salt
- 2 cups sliced fresh mushrooms

- 3 tablespoons all-purpose flour
- 1/4 teaspoon salt
- 1 1/4 cups reduced-sodium chicken broth
- 1/4 cup dry Marsala
