Lemon-Sage Pork Chops on a Stick

- 12 6 ounces boneless pork loin chops, cut 1 inch thick
- 1 tablespoon finely shredded lemon peel
- 3/4 cup lemon juice
- 3/4 cup olive oil
- 1/3 cup finely chopped shallot (1 large)
- 1/3 cup coarse ground mustard
- 1/4 cup snipped fresh sage
- 6 cloves garlic, minced
- 2 teaspoons coarse ground black pepper
- 1 teaspoon salt
- 12 8x1/4-inch-thick wooden skewers, dowels, or bamboo chopsticks*
- Snipped fresh sage (optional)
- Lemon wedges (optional)

- 2 tablespoons ghee (or fat of choice)
- 2 onions, diced
- 1 teaspoon tomato paste
- ½ teaspoon fish sauce
- ½ pound cremini mushrooms, sliced
- 3 garlic cloves, minced
- 4 cups bone broth or organic chicken stock
- 3 fresh thyme sprigs

Cider-Braised Pork Roast and Apples

- 1 3 pound boneless pork top loin roast
- 1/2 teaspoon salt
- 1/2 teaspoon dried thyme, crushed
- 1/2 teaspoon dried sage, crushed
- 1/4 teaspoon ground black pepper
- 2 tablespoons cooking oil
- 4 red, yellow, and/or green apples, cored and each cut into 6 wedges
- 1/3 cup chopped shallots
- 1 tablespoon bottled minced garlic or 6 cloves garlic, minced
- 3 tablespoons quick-cooking tapioca
- 3/4 cup chicken broth
- 3/4 cup apple cider or juice
- 3 cups hot cooked rice
Coconut Shrimp with Mango Sauce

- 1 lime
- 2 mangoes, halved, seeded, peeled, & chopped
- 1/4 honey
- 1/8 teaspoon cayenne pepper
- Snipped fresh cilantro
- 12 oz. fresh or thawed frozen peeled & deveined large shrimp
- 1 cup unsweetened flaked coconut (4 oz.)

Cajun-Style Broiled Swordfish

- 9 oz. swordfish steaks, 3/4" to 1" thick (6 protein)
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon oregano
- 1/8 teaspoon ground red peppr
- 1/4 cup lemon juice

- 1 1/2 pounds boneless, skinless fresh salmon fillets or tuna, halibut, or swordfish steaks, cut about 1 inch thick
- 3 tablespoons lemon juice
- 2 cloves garlic, minced
- 2 tablespoons snipped fresh basil or 1 teaspoon dried basil, crushed
- 1 tablespoon cooking oil
- 1 tablespoon reduced-sodium soy sauce
- 1 teaspoon Worcestershire sauce
- 1/4 teaspoon pepper

Hash Brown Crust

- 3 cups of potatoes, shredded russets or Yukon Golds work well or even a combination
- 1/2 stick of butter, melted
- 1 Tablespoon of cheddar powder (available in good spice stores)
- 1 teaspoon of Italian or other seasoning - we like Cantanzaro herb blend from Savory Spice Shop.
- 1 teaspoon of salt - - this alderwood smoked salt is our favorite
- 1 tablespoon of garlic powder
Turkey Bacon Salad

- 1/2 cup light mayonnaise
- 1 Tbsp. Dijon-style mustard
- 1 Tbsp. cider vinegar
- 1 Tbsp. snipped fresh dill
- 1 small head romaine, coarsely chopped or torn
- 8 oz. smoked turkey breast, cut into bite-size strips
Tex-Mex Taco Dip

- 2 16-ounce cans fat-free refried beans
- 3 avocados, halved, seeded, peeled and mashed
- 2 tablespoons lemon juice
- 1/2 cup fat-free dairy sour cream
- 1/2 cup fat-free mayonnaise
