Fragrant Chicken Curry

- 2 tablespoons curry powder
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon

- 1/4 teaspoon cayenne pepper

- 1 large onion, halved & thinly sliced
- 3 garlic cloves, minced
- 1 rotisserie chicken, skinned & boned, meat pulled into large chunks
- 1 (13 1/2 oz.) can coconut milk
- 1 (14 1/2 oz.) can diced tomatoes
- 1 (14 1/2 oz.) can chicken broth

Pork Stew with Polenta

- 1 1/2 pounds boneless pork country-style ribs
- 1 cup chopped onion (1 large)
- 1 cup coarsely chopped green, yellow, and/or red sweet pepper (1 large)
- 1 14 1/2 ounce can diced tomatoes with basil and oregano, undrained
- 1 14 ounce can beef broth
- 1/4 cup dry red wine
- 3 tablespoons quick-cooking tapioca, crushed
- 1 teaspoon dried Italian seasoning, crushed
- 1/4 teaspoon salt
- 2 cloves garlic, minced
- 1 16 ounce tube refrigerated cooked polenta
- 2 cups torn fresh baby spinach (optional)
- Shredded Parmesan cheese (optional)
Triple-Berry Cobbler

- 3/4 cup sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 eggs, lightly beaten
- 3 tablespoons vegetable oil
- 2 tablespoons milk
- 2 cups fresh or frozen blueberries
- 2 cups fresh or frozen raspberries
- 2 cups fresh or frozen blackberries
- 1 cup sugar
- 1 cup water
- 3 tablespoons quick-cooking tapioca
- Vanilla ice cream, whipped cream, half-and-half, or light cream (optional)
Beef Sirloin Tips with Smokey Pepper Sauce

This was really good - would be great with mashed potatoes
- 1-1/2 lb. beef sirloin tip steak
- 1/2 tsp. smoked paprika or paprika
- 1 Tbsp. vegetable oil
- 1 2- to 16-oz. jar roasted red and/or yellow sweet peppers
- 1/2 cup hickory- or mesquite-flavored barbecue sauce
- 1/4 cup coarsely chopped fresh Italian (flat-leaf) parsley
Chipotle Twice Baked Sweet Potatoes

- 1 lime, juiced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chipotle chili powder (or regular chili powder)

- 1/2 cup chopped cilantro

- 3/4 cup coconut flour
- 1/2 tsp baking soda
- 1/2 tsp sea salt
- 6 eggs
- 1/3 cup light olive oil or other mild-tasting oil
- 3/4 cup raw honey
- 1 tbs vanilla extract
- Dark Chocolate Frosting
- 1 cup palm shortening
- 1/3 cup maple syrup
- 1/2 cup 100 % cacao powder
- 1 tsp vanilla
- pinch sea salt
Grilled Fish with Orange Salad

This is very good - the grilled swordfish is yummy & the orange salad is very tasty also
- 2 tablespoons finely chopped red onion
- pinch of crushed red pepper
- 2 tablespoons extra-virgin olive oil
- 2 teaspoons fresh lemon juice
- 1/2 teaspoon pepper
- 3 large navel oranges
- 8 oil-cured black olives, pitted and coarsely chopped
- 1/2 cup fresh mint leaves, chopped (2 tbsp)
- 4 swordfish steaks, about 6 oz. each
Asiago Wafers

- 1 1/2 cups all-purpose flour
- 1 tablespoon finely snipped fresh rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon ground white pepper
- 6 tablespoons cold butter, cut into 18 pieces
- 2 cups finely grated Asiago cheese (8 ounces)
- 2 tablespoons milk
- 1/2 cup dairy sour cream
- Fresh rosemary leaves (optional)
- 2 egg whites, slightly beaten (optional)
Grilled Flank Steak, Onion and Peppers

this was good
- 1 flank steak (1 1/2 lbs)
- 1 1/2 t kosher salt, divided
- 1/2 t each pepper, ground cumin, garlic powder, paprika, and chili powder
- 4 T melted unsalted butter
- Juice of 1 lemon
- 1 medium onion, sliced into thirds
- 1 each red and yellow bell peppers, seeded and quartered
- 1 T olive oil
- 2 garlic cloves, minced
