Chinese Lion's Head Meatballs

- Meatballs:
- 1 1/2 lbs ground pork
- 4 bulbs scallions, chopped
- 1 T ginger, grated
- 1 1/2 T toasted sesame oil
- 2 T coconut aminos
- 1/2 t coarse sea salt
- 1 large shallot, chopped
- 1 egg
- 2 t arrowroot powder
- Braising Mix:
- 1/4 of a whole napa cabbage or savoy cabbage
- 2 - 3 baby bok choy, halved (optional)
- 3 thin slices garlic
- 1 - 2 bulbs scallions
- 1 cup chicken stock
- 2 T coconut aminos
- 2 t toasted sesame oil
- coarse sea salt
Chcken Fajitas with Jicama Relish

- 4 skinless, boneless chicken breast halves
- 1/2 cup bottled Italian salad dressing
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 2 small red, green, and/or yellow sweet peppers, quartered lengthwise and seeded
- 1 small red onion, cut into 1/2-inch slices
- 8 10-inch flour tortillas, warmed*
- 1 recipe Jicama Relish
- 1 16-ounce jar salsa
Tangy Lemon Chicken

Very, very tasty!! We used this recipe for our turkey on Thanksgiving, just upping all the quantities as necessary...
- 2 lemons
- 1 (5 lb) whole roasting chicken
- 3 tablespoons olive oil
- 2 garlic cloves, minced
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon fresh thyme, chopped
- 1/2 teaspoon fresh rosemary, chopped
- 1 small yellow onion, peeled & quartered
- 2 fennel bulbs, cut into wedges
- 2 red onions, peeled, cut into wedges
Grilled Sausage & Veggies

This is a zoned recipe that provides 2 - 3 block meals (each 3 protein, 2 carb, 3 fat)
- 6 oz. Kielbasa or smoked sausage of your choice (enough to provide 42 grams of protein)
- 3 cups yellow bell pepper, coarsely chopped (1 1/2 carb)
- 1 1/2 cup red onion, coarsely chopped (1 carb)
- 3 cups zucchini, coarsely chopped (1 1/2 carb)
- 2 teaspoons olive oil
- lemon juice to taste
- salt & pepper
Classic Chili

This was really a good, easy chili
- 1 pound lean ground beef
- 1/2 cup chopped green sweet pepper (1 small)
- 1/2 cup chopped onion (1 medium)
- 4 cloves garlic, minced
- 1 15-ounce can tomato sauce
- 1 15-ounce can red kidney beans, undrained
- 1 14.5-ounce can diced tomatoes, undrained
- 2 to 3 teaspoons chili powder
- 1/2 teaspoon salt
- 1/2 teaspoon dried basil, crushed
- 1/4 teaspoon ground black pepper
- Shredded cheddar cheese (optional)
- Chopped onion (optional)
- Dairy sour cream (optional)
- Crushed red pepper (optional)
Split Pea Soup

Really good - fun to make with the leftover bone from a ham
- 1 lb bag dried split peas
- 2 quarts chicken stock
- 1 ham bone
- 2 cups carrots, diced
- 1 potato, diced
- 1 onion, diced
- 2 cloves garlic, chopped
- 1/2 t salt
- 1/2 t garlic powder
- 1/2 t cumin
- 1/4 t paprika
- 1/4 t pepper
- 2 bay leaves

- 1 fresh pineapple
- 2 cups cubed cantaloupe
- 1 cup halved fresh strawberries
- 1 cup fresh blueberries
- 1 tablespoon lime juice
- 1 cup fresh strawberries, mashed
- 1 cup reduced-fat plain yogurt
- 2 tablespoons honey
- 1 tablespoon lime juice
- 1 1/2 teaspoon grated lime peel

- 1 teaspoon grated fresh ginger
- 1/2 teaspoon instant beef bouillon granules
- 3 cloves garlic, minced
- 2 cups coarsely chopped broccoli
- 1 to 2 tablespoons reduced-sodium teriyaki sauce
