- 2/3 cup rice wine vinegar
- 1/3 cup orange juice
- 2 tbsp olive oil
- 2 tbsp chopped fresh cilantro
- 1 tbsp Dijon mustard
- 2 tsp minced garlic
- 1 tsp honey

- 2 medium onions, sliced
- 2 medium carrots, cut into 1/4-inch slices
- 1 tablespoon grated fresh ginger
- 1 tablespoon olive oil
- 3 cups water
- 1 14 ounce can chicken broth
- 1 15 ounce can pumpkin
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/8 teaspoon ground nutmeg
- 1/2 cup dairy sour cream
- Ground nutmeg
- Purchased sweet potato chips (optional)
Grilled BLT Skewers

- Basil Buttermilk Dressing:
- 1/3 cup lemon juice
- 1/3 cup olive oil
- 2 tablespoons snipped fresh basil
- 1 heart of romaine lettuce, quartered lengthwise
- 1 cup cherry tomatoes
- 1 medium avocado, halved, seeded, peeled and cut in 1-1/2-inch chunks
- 1/2 16 ounce loaf ciabatta bread, cut in 1-inch cubes
- 8 slices thick-sliced bacon
- 1 recipe Basil Buttermilk Dressing (below)
- Lime wedges (optional)
- Yield: 2/3 cup
- 1/3 cup buttermilk
- 1/4 cup mayonnaise
- 1 tablespoon lime juice
- 1 clove garlic, minced
- 1 tablespoon snipped fresh basil
- 1/4 teaspoon salt
- 1/8 teaspoon cayenne pepper
- Directions:
- 1 . In a small bowl, whisk together buttermilk, mayonnaise, lime juice, garlic, basil, salt, and cayenne pepper. Makes about 2/3 cup
