Easy Italian Chicken

- 1/2 of a medium head cabbage, cut into wedges (about 12 ounces)
- 1 medium onion, sliced and separated into rings
- 1 4 1/2ounce jar (drained weight)(drained weight) sliced mushrooms, drained
- 2 tablespoons quick-cooking tapioca
- 2 - 2 1/2 pounds meaty chicken pieces (breast halves, thighs, and drumsticks), skinned
- 2 cups purchased meatless spaghetti sauce
- Grated Parmesan cheese
- Hot cooked pasta (optional)
Taco Seasoning

Instructions: Simply season raw meat then cook as desired
- per 1 lb meat
- ■1 tablespoon chili powder
- ■1 teaspoon cumin
- ■1/4 teaspoon onion powder
- ■1/4 teasoon garlic powder or minced garlic
- ■1/2 teaspoon dried oregano
- ■1/2 teaspoon paprika
- ■1 teaspoon salt
- ■1/2 teaspoon black pepper
Barbeque Beef Sandwiches

- 1 pound beef round steak, cut 3/4 inch thick
- Nonstick spray coating
- 1 14 1/2 ounce can tomatoes, cut up
- 1 large onion, chopped
- 1 large carrot, chopped
- 2 tablespoons Worcestershire sauce
- 2 tablespoons vinegar
- 1 tablespoon brown sugar
- 2 teaspoons chili powder
- 1 teaspoon dried oregano, crushed
- 1 clove garlic, minced
- 1 bay leaf
- 8 hamburger buns
Tomatillo-Watermelon Salad

- 2 avocados, halved, seeded, peeled, and cut into 1-inch pieces
- 4 tomatillos, husked and thinly sliced
- 1 small red onion, halved and thinly sliced
- 1 cup crumbled queso fresco (4 ounces)
- 1/4 cup olive oil
- 3 tablespoons lime juice
- 2 tablespoons sherry vinegar
- 1 tablespoon finely chopped fresh jalapeno chile pepper*

Cinnamon French Toast Panna Cotta

Sausage and Shrimp Jambalaya

This is a recipe from Better Homes & Gardens that I have "zoned"
- 10 oz. Turkey Polska Kielbasa Sausage, sliced (6 protein)
- 9 oz. shrimp, cleaned (6 protein) (defrost about 13 oz if uncleaned, & frozen)
- 2 cups red, yellow and/or green bell pepper, chopped (1 carb)
- 1 cup celery, thinly sliced (1/2 carb)
- 1 1/2 cup onion, chopped (1 carb)
- 1 - 14 oz. can low-salt diced tomatoes, undrained (1 carb)
- 1 - 10 oz. can chopped tomatoes and green chile peppers, undrained (1 carb)
- 2 tablespoons quick-cooking tapioca (2 carbs)
- 1 teaspoon dried basil, crushed
- 1/4 teaspoon cayenne pepper
- 2 cups loose-pack frozen cut okra (2 carbs)

- 3 to 4 pounds boneless pork shoulder/butt cut into five pieces. You can trim off a little bit of the fat or leave it all on. (1.4 to 1.8 kg)
- 1 1/2 teaspoons salt (7 ml)
- 1 teaspoon cumin (5 ml)
- 1 teaspoon chili powder (5 ml)
- 1 cinnamon stick
- 1 bay leaf
- 4 garlic cloves, thinly sliced
- 1 onion, chopped or thinly sliced
