Cup of Garden Soup

This was soooo good - really had the flavor of a minestrone
- 1 tablespoon olive oil
- 2 strips of smoked bacon, finely chopped
- 1 clove garlic, peeled and finely chopped
- 1 medium red onion, peeled, halved and finely chopped
- 2 carrots, washed and finely chopped
- 2 sticks of celery, finely chopped
- 1 zucchini, finely chopped
- 1 small leek, washed and finely chopped
- 1/2 teaspoon dried oregano
- 1 bay leaf
- 2 14 1/2 ounce can chopped plum tomatoes
- 1 large potato, scrubbed and diced
- 1 cup Romanesco cauliflower or cauliflower florets
- 1 15 1/2 ounce can chickpeas, drained and rinsed
- 4 cup(one 1-qt. container)reduced-sodium vegetable broth, preferably organic
- Large handful curly kale, stalks removed, chopped (about 2 cups)
- 1/2 cup mixed small pasta shapes or broken spaghetti
- Small bunch of fresh basil (optional)
- Sea salt and freshly ground pepper
- 5 tablespoons freshly grated Parmesan cheese

- 6 purchased thick olive focaccia bread wedges
- 1/2 cup shredded Asiago or mozzarella cheese

Braised Beef Shanks with Mushrooms and Olives

- 4 bone-in beef shanks, about 1-1/4-inches thick (about 4 lb.)
- Salt and ground black pepper
- 2 large onions, chopped (2 cups)
- 2 medium carrots, coarsely chopped (1 cup)
- 3 cloves garlic, minced
- 3/4 cup dry red wine or beef broth
- 1 14 1/2ounce canundrained can diced tomatoes with basil, garlic, and oregano
- 1 cup beef broth
- 12 ounces cremini or button mushrooms, quartered or halved
- 1 recipe Fresh Herb Topper, recipe below
- 3/4 cup pitted assorted olives

Pulled Roast Chicken Sandwiches

- 1 medium onion, cut in 1/4-inch slices
- 1 tablespoon olive oil
- 1/3 cup cider vinegar or white wine vinegar
- 1/2 cup tomato sauce
- 3 - 4 tablespoons seeded and finely chopped fresh red and/or green serrano chile peppers
- 2 tablespoons snipped fresh thyme
- 2 tablespoons molasses
- 2 tablespoons water
- 1/2 teaspoon salt
