Apple Cider Punch

- 6 cups apple cider
- 2 cups orange juice, cranberry-raspberry juice, or orange-mango juice
- 1/2 cup lemon juice
- 1 750 milliliter bottle sparkling white grape juice or sparkling wine
Warm Fajita Salad

This was super good :) I used coconut oil to cook the meat & veggies
- 1/4 cup lime juice
- 1/4 cup reduced-sodium chicken broth
- 1 tablespoon snipped fresh cilantro
- 2 cloves garlic, minced
- 1-1/2 teaspoons cornstarch
- 3/4 pound boneless beef top sirloin steak, cut into thin, bite-size strips
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- Nonstick cooking spray
- 2 small onions, cut into thin wedges
- 2 small green, red, and/or yellow sweet peppers, cut into thin strips
- 1 tablespoon cooking oil
- 1 10-ounce package torn mixed greens (8 cups)
- 12 cherry tomatoes, quartered
- Baked Tortilla strips (see recipe below), (optional)
- Red or green salsa (optional)
Rosemary Roasted Vegetables

This was sooooo good - I used bacon
- 12 ounces green beans
- 1 pound Brussels sprouts
- 6 green onions, trimmed and cut up
- 12 fresh rosemary sprigs
- 8 slices pancetta or bacon, partially cooked, drained, and cut up
- 2 tablespoons olive oil
- Salt
- Black pepper
- 1 lemon, halved
Garlic Chicken with Artichokes

- 2 mediumred sweet peppers, cut into 1-inch-wide strips
- 2 mediumonions, cut in wedges
- 12 clovesgarlic, peeled
- 1 tablespoon quick-cooking tapioca
- 2 teaspoons dried rosemary, crushed
- 1 teaspoon finely shredded lemon peel
- 1/2 teaspoon ground black pepper
- 1/2 cup chicken broth
- 3 pounds skinless, boneless chicken thighs
- 1 8 - 9 ounce packagefrozen artichoke hearts
- 1 tablespoon lemon juice
- 4 cups hot cooked brown rice
Lime Almond Dressing

Add all ingredients to cruet or large mason jar
- 1/2 cup fresh lime juice
- 1 tbsp honey
- 2 tbsp finely chopped unsalted roasted almonds
- 2 tbsp fish sauce (available in the Asian Specialty section of most major grocery stores)
- 1 tbsp fresh ginger (minced)
- 1 tbsp fresh cilantro (chopped)
- 4 garlic cloves (minced)
Eggplant Casserole

- 1 medium eggplant (1 pound), peeled if desired
- 2 tablespoons cooking oil
- 1-1/2 cups chopped onion
- 2 cups chopped green sweet pepper
- 1 tablespoon cooking oil
- 1 tablespoon all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup sliced pitted ripe olives
- 1/2 cup shredded sharp American cheese or cheddar cheese (2 ounces)
- 1 8-ounce can tomato sauce
- 3/4 cup soft bread crumbs (1 slice)
- 1 tablespoon margarine or butter, melted
Chicken and Vegetables with Herbs

This was very good - made with mashed potatoes - very good like that
- 8 ounces mushrooms, halved
- 1 cup frozen pearl onions
- 1/2 cup chicken broth
- 1/4 cup dry red wine
- 2 tablespoons tomato paste
- 1/2 teaspoon garlic salt
- 1/2 teaspoon dried rosemary, crushed
- 1/2 teaspoon dried thyme, crushed
- 1/4 teaspoon ground black pepper
- 1 bay leaf
- 4 small chicken legs (drumstick-thigh portion; skinned) (2 to 2-1/2 pounds total)
- Chicken broth (optional)
