Royal Icing

1 in a stand mixer combine confectioners sugar and meringue powder until combined
- 4 cups confectioners sugar
- 3 tbs meringue powder
- 12 tsp vanilla extract
- 1/2 to 3/4 cup warm water
Butternut Squash and Brown Rice Risotto

1. Cut squash in half, remove seeds and strings to a sauce pan
- 2 Tbs. olive oil (divided)
- 4 cloves garlic
- 1/2 butternut squash (2 lb)
- 1 Tbs. butter
- 3 shakes chile flakes
- 1/2 tsp. cumin seed
- 1 cippolini onion
- 1 c. short grain brown rice
- 5 c. broth
- 14 dried sage leaves
- 1/2 c. white wine
- 1 Tbs. heavy cream
- 1/2 tsp. fresh thyme
- 1 tsp. lemon zest
- 1/2 c. parmigiano reggiano
Cinnabon Recipe

Rolls: Oven to 400° F. (1) Dissolve yeast in milk
- Rolls:
- 11/4 oz. pckg. Yeast
- 1 c. warm milk
- 1/2 c. granulated sugar
- 1/3 c. melted butter (do not substitute margarine)
- 1 t. salt
- 2 eggs
- 4 c. all-purpose flour
- Filling:
- 1 c. packed brown sugar (I just sprinkle as much as I can and like, never measuring)
- 21/2 TBS. cinnamon
- 1/3 c. butter
- Icing:
- 7 TBS. butter, softened
- 11/2 c. confectioners’ sugar
- 1/4 c. (2 oz.) cream cheese
- 1/2 t. real vanilla extract (or almond extract, which I prefer and use)
- 1/8 t. salt (I don't always use the salt, and in fact, like the taste better without it)
No-salt navy beans

SAUSAGE SPOON BREAD

Brown sausage in skillet; remove with slotted spoon
- 1/2 lb. pork sausage
- 1/4 c. chopped onion
- 1 c. finely chopped celery
- 2 1/2 c. milk
- 1 c. white cornmeal
- 2 tbsp. butter
- 1 tsp. salt
- 3 eggs, separated
Turkey Gravy

Heat the oven to 375 degrees F
- 2 pounds turkey wings
- 5 tablespoons extra-virgin olive oil
- 1 medium onion, halved
- 4 carrots, chopped
- 1 head garlic, smashed
- 2 sprigs fresh sage
- 2 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 8 black peppercorns
- 2 tablespoons unsalted butter
- 1/4 cup all-purpose flour
- Kosher salt and freshly ground black pepper
Waldorf Salad

Waldorf Salad. Toss all ingredients together in a serving bowl
- 2 cups coarsely chopped apples, about 2 medium apples
- 1 cup chopped celery
- 1/2 cup mayonnaise, or to taste
- 1/3 cup coarsely chopped walnuts
- mixed salad greens or lettuce
Orange Sesame Dressing

Toast the sesame seeds in a dry skillet over medium high heat for 3 minutes, shaking the pan frequently
- 3 tablespoons unhulled sesame seeds
- 12 raw cashew nuts
- 1/2 cup orange juice
- 2 tablespoons Dr. Fuhrman's Riesling Raisin Vinegar or seasoned rice vinegar
- 2 oranges, peeled and diced, or 1 jar unsweetened mandarin oranges
Short Grain Brown Rice Risotto – foundation recipe

Normally you would add aromatics to the pan first and sauté those before the rice
- 2 cups of short grain brown rice
- 1 tablespoon of extra virgin olive oil
- 1/4 cup of dry white wine or Marsala wine
- 1 teaspoon of kosher salt
- 10 cups of filtered water or vegetable stock, heated to a simmer (you may only use part of this)
Baked Potatoe Casserole

1 place potatoes in a large saucepan, coer with water and bring to a boil
- 8 medium potatoes peeled and cut into 1" cubes
- 1 cup evaporated milk
- 1/2 cup sour crea,
- 1 tsp salt
- 1/2 tsp pepper
- 2 cups shredded cheddar cheese divided
- 6 slices bacon
- sliced green onions
