Baked Potatoe Casserole

  • 8 medium potatoes peeled and cut into 1" cubes
  • 1 cup evaporated milk
  • 1/2 cup sour crea,
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 cups shredded cheddar cheese divided
  • 6 slices bacon
  • sliced green onions

Preparation

Step 1

1 place potatoes in a large saucepan, coer with water and bring to a boil.
2 Cook ver medium high heat for 15-20 minutes or until tender, drain.
3 Preheat oven to 350 degrees and grease 2 1/2 to 3 quart casserole dish.
4 Return potatoes to saucepan; add evaporated milk, sour cream, salt and pepper. Beat with hand mixer till smooth. (potatoe masher works just as well)
5 Stir in 1 1/2cups cheese and half of the bacon. Spoon mixture into prepared casserole dish.
6 Bake for 20-25 minutes or until heated through
7 Top with remaining cheese, remaining bacon and green onions.
8 Bake for an additional 3 minutes or until cheese is melted.
