Banana Walnut Bread

Banana bread is easy to make-just a few simple steps-and irresistible to eat
- 1 1/4 cups unbleached all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon fine salt
- 2 large eggs, at room temperature
- 1/2 teaspoon pure vanilla extract
- 1 stick unsalted butter, at room temperature, plus more for greasing the pan
- 1 cup sugar
- 3 very ripe bananas, peeled and mashed with a fork (about 1 cup)

broccoli chicken casserole

Preheat oven to 350 degrees F (175 degrees C)
- 1 cup shredded Cheddar cheese
- 1 cup dry stuffing mix
- 1 (10.75 ounce) can condensed cream of Chicken soup 1 (10.75 ounce)
- 4 skinless, boneless chicken breast
- 1 tablespoon mayonnaise
- 1 pound broccoli florets, cooked

Black Bean Hummus

Blend all ingredients, except the paprika, in food processor with 2 tablespoons bean liquid
- 1 15-ounce can black beans, no or low salt or 1 1/2 cups cooked beans, drained, reserving some of the
- bean liquid
- 2 tablespoons fresh lemon juice
- 2 tablespoons Dr. Fuhrman’s VegiZest or other no salt seasoning
- 2 tablespoons raw tahini
- 2 teaspoons Bragg Liquid Aminos or low sodium soy sauce
- 1/2 teaspoon ground cumin
- 1/2 clove garlic, chopped
- pinch cayenne pepper, or to taste
- pinch paprika, for garnish
Blueberry Salad

Put blueberries and celery on a bed of romaine lettuce
- 2 stalks organic celery, chopped
- 3 cups blueberries

Peel broccoli stems, then cut up the florets and stems into small pieces and steam for 8 minutes
- 4 stalks broccoli, stems and florets
- 4 garlic cloves, chopped

- 1/2 tablespoon cornstarch
- 1 teaspoon sesame oil
