Chicken Pesto Risotto

A tasty dish you'll keep in your recipe box
- 2 chicken breasts
- pesto (homemade or from a jar) to your liking
- 1/2 cup arborio rice
- salt and pepper to taste
- 2 tbsp. heavy cream
Baked Brown Rice Risotto

Preheat oven to 425 degrees
- Risotto:
- 1 acorn squash, peeled and diced
- 2 teaspoons extra virgin olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground pepper
- 4 tablespoons butter
- 1 shallot minced
- 1 1/4 cup long grain brown rice
- 32 ounces chicken broth, warmed
- 1/2 teaspoon kosher salt
- 1/4 teaspoon saffron threads
- 1/2 teaspoon freshly ground white pepper
- 1/2 cup freshly grated Parmesan cheese
Andouille-Milk Gravy over Buttermilk Mashed Potatoes

Place the potatoes in a medium pot and cover with cold water by 1-inch
- 2 pounds Idaho potatoes, peeled and cut into 1-inch pieces
- 1 1/4 cups buttermilk
- 4 tablespoons unsalted butter
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
Chicken and Rice Bake

1 stir the soup, water, rice, paprika and black pepper in a 2 quart shallow baking dish
- 1 can (10 3/4 oz) cream of mushroom soup.
- 1 cup water
- 3/4 cup uncooked rice
- 1/4 tsp paprika
- 1/4 tsp ground black pepper
- 4 skinless, boneless chicken breast halves.
Spiced Butternut Squash and Lentil Soup

1. Rinse and drain lentils
- 1 cup dried lentils
- 2 1/2 cups butternut squash cubes
- 1/2 cup chopped onion
- 1/2 cup chopped carrot
- 1/2 cup chopped celery
- 2 garlic cloves (minced)
- 1 teaspoon garam masala
- 4 cups low sodium vegetable broth
Polynesian Stir Fry

If using rice, prepare according to package directions
- brown rice (optional)
- 1 20-ounce can crushed pineapple, in its own juice
- 1 tablespoon all fruit apricot jam
- 3 cloves garlic, chopped
- 1/2 teaspoon Bragg Liquid Aminos
- 1 teaspoon toasted sesame oil
- 1 cup snow peas, cut in half
- 1 large onion, cut into wedges and separated
- 8 ounces can water chestnuts
- 3 cups broccoli florets
- 1 cup fresh or canned baby corn, cut into one inch pieces
- 1/2 cup unhulled sesame seeds
- 1 15-ounce can no or low salt beans of your choice, drained
- 7 ounces fresh organic baby spinach
Shallot Sauce

- 2 tablespoons cracked black pepper
- 1 full shallot chopped
- 1 packet chicken bullion
- 1 packet beef bullion
