Quick Cherry Desert

For one 13x9" cake, 16 generous servings
- 1 cup (2 sticks) butter or margarine
- 1 1/2 cups of granulated sugar
- 4 eggs
- 1 tsp. almond extract
- 2 cups of all purpose flour
- 2 tsp. baking powder
- 1 can (21 ozs. ) cherry pie filling
- Powdered sugar to dust over top. optional
Baked Pork Chops and Dressing

Grease a shallow pan and then place pork chops, side down, so that all chops hit pan
- Pork Chops
- 3 cups of dry dressing
- 2 tbs. chopped onion
- 1/4 cup melted margarine
- 1/2 tsp. poultry seasoning
- 1/4 cup water
- 1 can cream of mushroom soup
- 1/3 cup water
Grilled Eggplant, Red Onion and Pepper Sand. with Basil Mayonnaise

In a lg. nonreactive bowl or shallow dish, combine thee olive oil, thyme, rosemary, pepper and salt and stir to mix
- For the mayonnaise:
- 1/4 cup olive oil
- 2 Tbs. fresh thyme leaves
- 2 Tbs. fresh rosemary leaves
- 1/2 tsp. freshly ground pepper
- 1/4 tsp. salt
- 2 globe or 4 Asian eggplant, thinly sliced
- 2 lg. red onions, thinly sliced
- 3 lg. red bell peppers
- 2 gerlic cloves
- 1 Tbs. olive oil
- 1/4 cup minced fresh basil
- 1/2 tsp. chopped fresh thyme
- 3/4 cup mayonnaise
- 2 baguesses, each split lengthwise and then cut crosswise into thirds
- 6-12 red-leaf lettuce leaves
Monkey Bread

Melt margarine and brown sugar and 1/2 cup sugar
- 1 can butter milk biscuits
- 1/2 cup brown sugar
- 1/2 cup sugar
- 2 sticks margarine
- 2/3 cup sugar
- 3 tsp. cinnamon
Spaghetti Pie

Cook spaghette, drain. Stir in butter while spaghetti is hot
- 6 oz. spaghetti
- 2 tbs. butter
- 1/3 cup grated Parmesan cheese
- 2 well beaten eggs
- 1 lb. hamburg
- 1/2 cup chopped onions
- 1/4 cup chopped, ground green pepper
- 8 oz. can, cut up tomatoes
- 6 oz. can, tomato paste
- 1 tsp. sugar
- 1 tsp. oregano
- 1/2 tsp. garlic salt
- 1 cup cottage cheese
- 1/2 cup shredded mozzarella cheese
Perogi

Mix well. Incorporate enough flour to make the dough not sticky but elastic, then knead until well mixed
- 1 egg (whisked well)
- 1-2 tbs. Sour cream
- 1 cup water
- 1 cup milk
- 2 cups flour (heaping)
Garlic-Basil Chicken

In shallow dish or pan, mix garlic, basil, salt and pepper, lemon juice and 1 tbs
- 3 cloves garlic
- 1 tbs. dried basil leaves
- 1/2 tsp. pepper
- 1/4 tsp. salt
- 1 tbs. lemon juice
- 2 tbs. olive oil
- 2 bone-in chicken breasts
Carmel Corn

Pop popcorn and placee in a large mixing bowl or in two 13X9" baking pans
- 1 cup of unpopped popcorn- popped in an air popper
- 1 cup of butter
- 2 cups of brown sugar
- 1/2 cup of Karo Syrup
- 1 tsp. salt
- 1 tsp. baking soda
Balsamic Vinaigrette

In a sm. bowl, whick together the vinegar, shallots, salt and pepper
- 6 Tbs. balsamic vinegar
- 2 sm. shallots, finely minces
- Kosher salt and ground black pepper to taste
- 2/3 cup, extra virgin, olive oil
Oriental Crunch

Blend together butter, instant coffee, salt and extracts
- 1 cup shortening
- 2 tbs. instant coffee
- 1/2 tsp. salt
- 1/2 tsp. almond flavor
- 1 tsp. vanilla
- 1 cup sugar
- 2 cusp flour
- 1 6 oz. pkg. chocolate chips
- 1/2 cup chopped nuts
