Strawberry butter

Place in food processor or blender and process until smooth and creamy
- 1 pint of strawberries (fresh) or 10 oz. frozen
- 1/2 pound of butter softened
- 1 cup of confectioners sugar, 1/2 cup if using frozen
- berries.

- Marinade:
- 2/3 cup balsamic vinegar
- 1/3 cup olive oil
- 2 tbs. soy sauce
- 4 1/2 tsp. firmly packed golden brown sugar
- 3/4 cup freshly ground pepper
- 1/2 cup filnely chopped fresh rosemary
- 5 garlic cloves
- 2 pork tenderloins, abour 2 1/2 lbs. total, trimmed
- salt to taste
Dill-icious Cucumber Dressing

Blend and serve. A great compliment to green, vegetables and chicken salad
- 3/4 cup plain nonfat yogurt
- 1/2 cup chopped cucumber
- 1 tbs. Dillweed
- 2 tsp. sugar
- 2 tsp. lemon juice
- 1/8 tsp. pepper
Layered Frittata

Preheat oven to 400 degrees
- 1 Tbs. olive oil
- 1 yellow onion, thinly sliced
- salt and freshly ground pepper to taste
- 1/2 cup nicoise olives, pitted and chopped
- 1/2 lb. chopped Swiss chard, blanched
- 6 plum tomatoes, seeded and cut into 1/2 in. strips
- 12 eggs, lightly beaten with 1 tsp. salt
- 1/2 cup grated, aged provolone cheese
- 2 oz. goat cheese, crumbled
- Finely chopped fresh flat-leaf parsley for garnish

Bake at 350 degrees for 35-40 minutes or until cream cheese mixture is lightly brorwned
- 20 to 30 oz. pkg. Brownie mix
- 8 oz pkg. Cream Cheese (softened)
- 1/3 cup sugar
- 1 egg
- 1/2 tsp. vanilla

- 2 cups (12 oz. pkg.) Semi-Sweet Choc. Morsels,

- 2 cups all-purpose flour
- 1/4 cup baking cocoa
- 1 tsp. baking powder
- 1/2 tsp. salt
- 3/4 cup, packed brown sugar
- 1/4 cup (1/2 stick) butter, softened

- 1/2 tsp. vanilla extract

- 1 tsp. chili powder
- 1/4 tsp. salt
- 1 clove garlic, finely chopped
- 1 small onion, thinly sliced
- 1/2 cup green or red bell pepper strips (2x1x1/4 in.)
